Just for grins, I took a look at crafting, using an ordinary longsword as an example. First stumbling block: It will cost me a minimum of half the retail price to make this thing. Since in general that's the best price I can get if I sell it, I can't make a profit. I brought that up in another thread, so enough said here. No more stumbling blocks, really, just some interesting data.

Assumptions: Trained proficiency at level 1, Expert at level 2, Master at level 7, Legendary at level 15. Spend as much time as is needed to keep the cost to half the price.

1. Crafting a standard longsword will take 8 days if I want to keep the cost to the minimum of half the retail price. If I make expert in crafting at level 2, it'll take me 4 days, and at level 3 I hit the minimum time of 2 days.

2. Crafting an expert longsword takes 91 days at level 2, and reduces over levels to the minimum 2 days at level 12.

3. Crafting a master longsword takes 94 days at the minimal level 7, and reduces to 2 days at level 19.

4. Crafting a legendary longsword takes 96 days at the minimal level 15, and reduces to 17 days at level 20. Can't get to 2 days.

That's quite a jump for the number of days at minimal level for the item.

Someone objected in another thread that smith who doesn't have legendary proficiency in crafting can't make a legendary sword even if he has the formula for it — but he can take the formula down the street to Brenda the Baskeweaver, who does have legendary proficiency in crafting, and she can make it even though she's never made a sword before.

There was a third party thing ("Making Craft Work") that talked about some other ways in which crafting was broken in PF1. It's still broken the same way in PF2.

Not sure how to fix it, but "Making Craft Work" is a start, and I'm surprised Paizo didn't just buy the idea and put it in the game years ago. :-)
