Probably my greatest personal disappointment with PF2 has been the lack, so far, of additional class path or subclass options. There’s been a few released after the initial class was released, but only a few.
But assuming the floodgates once again unclock, what would people like to see?
Two of mine (partly inspired by discussion in another thread):
1. Firearm/gunsmith path for Alchemist. Alchemists are largely responsible for firearms in Golarian, but re absolutely terrible at using them. I’d like to see something done to…reconcile that shall we say?
2. Explosions/Firearms for the Inventor. Related, I wanted to see more specific interaction between the Guns and Gears portions of G&G, and an entire explosives innovation for the Inventor might fit in nicely. I’m imagining some boffin absolutely incensed that, good, reliable siege weaponry is run by something as woo as alchemy, and working hard to apply science to the tech.
Other stuff: a helmet Innovation, an animated dream Eidolon, Death druids, Divine Operative methodology.
What are some of yours?

Some sort of supernatural Methodology for Investigators, for characters less interested in crime and more drawn to occult strangeness. I've heard of a friend of a friend who has a homebrew Methodology that simply grants the Eldritch Researcher archetype for free and that's 90% of the way there for what I want.
Aberration Eidolon is definitely something I want, though I'm not personally interested in Summoner until we get Synthesists back.
Nanite Bloodline is an obscure 1e favorite I want back for Sorcerers someday.
I feel like I need about a dozen more Oracle options, whatever they may be - I want to like the class, but don't click with any of the current Mysteries. The Time Mystery coming in Dark Archive has me deeply curious.
There's a hole in my heart in the shape of a Lawful Neutral path for Champion.

More barbarian instincts revolving around the emulation/fighting fire with fire style ala Dragon barbs.
A devil/demon barbarian would be awesome, especially as you could play an Aasimar one and eventual rock that dual angel/devil look while raging.
And an elemental barb!
Basically lets rock the quasi magical nature of barbarian rages even harder!

My top 3 are:
A Fungus/Decay oriented Druid order.
A Barbarian Instinct that replicates the Aberrant Bloodrager, we can already get big and turn into dragons, so why not "weird anatomy and stretchy arms."
Calamity/Apocalypse Oracle Mystery, with the corresponding thematic curse.
These all kick ass.

My top 3 are:

Folks have said quite a few of mine already, but one I haven't seen mentioned yet that I'd like to see would be a more urban Ranger. I like the thematics of the ranger, going after special targets and so on, but I'm not as interested in the nature theme they have going on. Broadening that out to other settings would be awesome.
Also eidolons. Just, just so, so many eidolons...

Yeah the "capturer" or something. Chasing your prey down and making it difficult to get away from you with buffed trips and grapples.
Movement economy shenanigans could be fun too. A free stride towards your prey when you hunt prey. A free step when you strike your prey. Stuff like that.

There are several out there on the boards already.
My take on code in a few words : your deity above everything (except maybe the non-Neutral part of your alignment).
My homebrew on powers : you choose the reaction that fits your alignment component on the Chaotic-Lawful axis and that is of an alignment allowed by your deity. And for deities that do not allow Good nor Evil alignments, you choose freely among the fitting reactions.

Swift Tracker so clearly there's thematic room to build around stuff like that, yeah.
I'll second the guns alchemist. More research fields are good. A new hunters edge based around maneuvers and movement possibly.
I tried to resist the urge to self-promote, but I wrote one on the homebrew forum that could use feedback. (Ignore the bullet on the post itself, I went a different direction entirely).

Sling support for gunslingers. Honestly you can almost just do this by saying "if it works for a crossbow it works for a sling too".
Gun/crossbow/sling support for magi. A different action rotation than the Starlit Span; nothing so obvious as reloading weapon and spellstrike at the same time, something more clever.
A thesis that makes wizards competitive in the skill feat arena, along with intelligence based skill feats with desirability on the same level as Bon Mot/Continual Recovery. Wizards should be able to play the class fantasy of powerfully smart guy. (And this also gives the investigator something to do with their surplus of mental skill feats.)
A champion path that doesn't make you feel bad for not going heavy armor. Plenty of nominally ranged-oriented deities but the champions feel awkward.
A lot more witch lessons, and some more patrons.

A few that immediately come to mind to me:

Something like PF1's Psychic Detective Investigator.
A 'know it all' swashbuckler that gets panache off RK could be kind of neat.
TWF Magus. It feels conspicuously absent.
Something that feels a little like pistolero but two-hander compatible. Gunslinger feels weird if I use a two-handed firearm but aren't interested in athletics or stealth.
And just for mechanical/symmetry reasons without a lot of good ideas I want to see a second option for Arcane Witches and any kind of Occult Barbarian.

The int swashbuckler is the ultimate smartass. Twf magus sounds like it would be pretty powerful. If it would get something like double slice + spellstrike. Oh boy.

Monks are one of two classes in PF2 that don't have class paths (along with fighters) so the only way we're going to get a "completely different kind of monk" is through a class archetype. Normally they just give monk options via "print some new monk feats" a thing which seems to happen more often than for other classes.

Monk could use some more weapon options. Monastic weaponry should open up some options that compete with stances or at least do something unique. Peafowl stance is a good example. Very good skirmisher. Perhaps add advanced weapon support. There's a couple odd advanced monk weapons with no obvious way to use them as a monk. A 6th level feat like fighters get would work.

I would like a Wizard subclass which really makes you a hyperspecialist in one school to the detriment of the others. Including poaching spells from other Traditions.
Necromancer has heals now. Could be interesting as a thesis. I don't know how adjusting other school spells would work. Maybe locking a number of spell slots to only your chosen school.

Oh, can we /please/ get the body horror Alchemist back.
One way I'd like to see this implemented would be to also bring back Fleshgrafts, both the temporary and permanent ones, and create a new research field for them. Let everyone enjoy the body horror but make the alchemist especially good at it.

- Occult class path for investigator. I think it's the biggest category of investigator not currently represented with a methodology.
- Swarm summoner or druid. Originally, I'd want this to be druid, but it really seems like it would fit an eidolon a lot better. (I would also list a fungal druid, but I'd prefer that as a class archetype to actually modify an animal companion to be a host.)
- Aberration eidolon. C'mon, it's the big occult thing everybody wants for summoner.
- Bloodrager. I really want a way to get the Glutton's Jaw focus spell integrated seamlessly with the barbarian class.
- Rakshasa bloodline. It's my favorite creature type, so I just want to see options for it again.
- Body horror alchemist. Gimme permanent body modification! Tumor familiars, extra arms, fast healing reactions to shrug off damage, that kind of thing.

Inquisitor doctrine for cleric that focuses an perception, tracking, and intimidation. (trade, say, the medium armor of a war priest for some skill and perception boosts)
Evangelist doctrine for cleric that focuses on persuasion, bluff, and performance (trade, say, the free domain spell of a cloistered cleric for some skill boosts)
Unarmed/Unarmored combat doctrine for cleric.
Demonic instinct for barbarians that lets them grow horns, claws and other demonic features.
Aberrant instinct for barbarians.
A paranormal investigator.
Storm, protean, aquatic bloodlines for sorcerer.
Wizard arcane thesis that allows them to add primal or occult (choose one) spells to their spell book as arcane spells. Note that divine is opposite of arcane, so it is not part of this thesis.

Yeah, but expanded to weapons that don't normally have the Monk trait, or don't qualify for ancestral weaponry.
Like, a spear monk style would be cool.
A katana monk style would be cool, maybe something like iajutsu/building off quick draw.

Im a sucker for monk stances so would love to see more of those, especially lvl 1 ones with follow up feats.
My big wish is essentially a twohand monk. The stance has the big disadvantage of having both your hands count as occupied while you are in it. In exchange the stance has a d12 damagd dice, with maybe shove as a trait. I think that would be balanced.
A katana based monk just to go full weeb.
Another grappling stance would be nice. Gorilla Was a bit of a letdown tbh, with the follow up feat being intimidation based instead of grapple based.
I'd also like to see more sorcerer subclasses. Id love to finally have one that can rival elemental. Thinking of elemental, with how weird it is regarding damage types (everything is bludgeoning), i would like a cold themed sorcerer and an electric themed sorcerer.
I also majorly love the idea people already mentioned here, a death/decay/mushroom druid
