Occult classes feel like the next obvious hole. I’m also desperately hoping Inquisitors come back.
Inquisitors could be a cleric doctrine. We'll find out come July (*fingers crossed*). The preview for Secrets of Magic seems to indicate that Occult classes might be on the way. We don't know what the Prepared Occult class will be, but if one combines such a class with the "emotions as a magic source" variant and the Flexible Spellcaster archetype, you could get something close to the Psychic.

I believe that’s his point - the play test document lists places that grant access to inventor and numeria isn’t one of them.

Lots of new details from the Ask the Experts Q + A

Big pieces of information about the classes:
Two new Gunslinger ways, Vanguard (Tanky, with Shotguns) and Spellshot (we know nothing beyond the fact that it exists and mixes magic into the Gunslinger's kit.)
We also know, (thanks to Michael Sayre) about a bunch of the reloading options, including a bandolier that not only applies weapon runes to all the guns stored on it, but also can teleport dropped guns directly from the ground back into the bandolier with an action. We know that we are indeed getting multishot magazines on some guns, we know that there are slide pistols that don't take a free hand to reload, and that Dual Weapon Reload is now a level 1 Gunslinger feat, and (mentioned in the same section) the Fatal Aim trait increases the size of the fatal die when the weapon is held in two hands. Individual ways now have their own neat reloading options.
Finally, Inventors will be delighted to know that Overdrive has slightly better scaling and that Unstable was fixed, also that unstable actions have a weaker version that doesn't trigger the unstable trait, and that final release includes support for lots of neat little gadgets through feats. Armor Inventors have also been adjusted to be a bit better as well.

Thank you both, by the way! I was thinking about trying to assemble the spoilers and teasers for folks who weren't able to attend the convention but I was wiped out from juggling a wedding, PaizoCon, and freelance over the weekend and I literally sighed with relief when I saw the work the two of you had done. Thanks for being contributors to the community and the hype train!

There will be a whole chapter on ships (or would it just be inside the vehicle chapter? Forgot that part when I asked the panel,,,) and guess what they get cannons!!!
Also siege engines are in the book so this is all set up for some epic battles in the future ;)
Pirates blasting away with their cannons while the seaside besieged castle replies back with their Ballista and stone throwers, . If they sink the Pirate ship battle won, if not might be a siege coming on, good times!!
Wonder if we will get new ship to ship and ship to castle type battle rules in here as well, long shot but ya never know!!

No. They listed the 3 from the playtest, but no new innovations were mentioned or listed.
I would guess that there is still going to be the original three, but those three will be expanded. During paizocon Mark hinted at there being different kinds of armor innovations, such as a stealthy version.

When will these classes be legal for PFS play?
The org play team has pretty consistently had player-focused books sanctioned for play on or before their release date for over a year now, and there's currently no reason to think that won't hold true here, barring an unforeseen delay. Watch the weekly org play blogs for updates!

I'm so excited for this book I'm trying not to think about it too much since it feels so far away. But as others have commented and caused me to get re-excited for it here's my top 5 list of things I'm excited for.
1. New classes, I mean of course. Mostly inventor, I have never been a gunslinger guy but I do really like the way 2e gunslinger works.
2. New consumables. From expanding existing stuff, like elixirs, traps, and new stuff (gadgets!!), adding more of these things will make some feats and archetypes even cooler.
3. New weapons. I'm especially looking forward to weapon arm type stuff (integrated weapons?!) But hearing some of the crazy ideas devs have for new weapons... I just can't wait. Troll gun alone made gunslinger 20% cooler.
4. New archetypes. We don't have much info on this, but archetypes are maybe my favorite thing in Pathfinder so yeah, should be good.
5. Automaton! Immortal races are the best, and I love the golem style of PC. The few hints we got on their feats sound insane and fun.

You can always check the automatons in Pathfinder Campaign Setting: Construct Handbook for some info on them while you wait. Though, this might just make the wait all the more intolerable.
Really liking the ones shaped like big hunting cats. I love the idea of getting your soul bound to a construct and going “wait, do I /have/ to be humanoid?”
…could be a fun Heritage, come to think of it!

There was an archetype mentioned in the Discord for Ask the Experts after the PaizoCon Panel and one of the Designers (James Case, I think...?) mentioned that there was an archetype for the Gunslinger that was a sort of accidental/serendipitous -style of gunslinger that hit targets by clumsy luck, fate/destiny, divine intervention, or whatever instead of with skill or talent to simulate things like comedic heroes who fight by luck and accident when the universe, fate, the gods, or whatever steps in to see the hero through the day (for example, those old westerns with comedians like Don Knotts and Bob Hope playing a dentist or other mundane person forced to pretend being a gunslinger for some reason). He stated that he could not remember the name of the archetype at the time. I can't remember the exact words he used to describe it, but that was the gist of the explanation for the archetype and really like it a lot, assuming they can pull it off with the rules for it. It really gives me a sort of Dirk Gently vibe. I just wish we could learn the name of it.

I don't know those movies. I was thinking something more along the lines of "The Shakiest Gun in the West" and "Paleface". Or for a more recent trope, something like "Trigun" might be a little closer to the concept, though not quite the same, since Vash is usually just dodging everything and the bad guys are doing most of the shooting. I know I have seen other media with this concept and probably is a better representation of it, but I cannot think of them right now.

I believe you were referencing the same thing. Vash "the Stampede" from Trigun.

It was not clearly stated and I thought Animism was referencing the old western movie by that name since I had previously referenced old westerns and their post never mentioned the title, "Trigun", or the name, "Vash", which is why I responded the way I did.

My nephew was indeed referencing Trigun, hence his use of the main character Vash's catch-phrase: "Love & Peace!"
Also, he's both waaay too young and not American to be aware of any westerns* (let alone old ones) -- but you wouldn't have known that, so... <shrug>

Oh wow! Lot of nice names that started writing for Paizo recently, and that seem to be set to become mainstays! I'm curious about what Sara wrote! :P
