Not in the slightest. I would enjoy the inclusion of the APG, and even that is still too much.

I've thought about making my next Classic character take the "Non-Core Challenge" though. No feats, spells, races, classes, equipment, or items from the Core Rulebook unless it forces it upon you (like an oracle getting all cure or inflict spells). I guarantee that's WAY more tough than playing Core. ;)
Now that is a challenge, the lack of stat boosts will hurt, maybe a kineticist... I am intrigued

I've never had any use for CORE, but I might like it if there was a "CORE+" league that incorporated the Advanced Player's Guide, Ultimate Magic, Ultimate Combat, *maybe* Occult Adventures, and nothing more.

To be honest, I'm not too keen on having the split between campaigns at all. I do like the idea of Core tables, and I understand the desire for limited replay, but fracturing the campaign like that does seem a bit burdensome to me. I've seen enough core characters become PFS-RPG characters due to the classic case of 'we don't have enough core players in tier to fill out a table of this subtier in the special' that something just feels a bit off to me.
Now what I think WOULD be cool is a freely available boon, like lets say something like this:
Limited Resources
Each time you complete a scenario where you and all other PCs restrict yourselves to <INSERT CORE CAMPAIGN LIMITATIONS HERE> write the scenario number and date on one of the lines below. Each line you fill allows you to replay a scenario you have played before.
With a boon like that, any sort of limited resources boon could be released with different restrictions, possibly requiring 2 lines to be filled before getting 1 replay back.

I've discussed it with my local community some and the general consensus is that Occult classes tend to fare best in this challenge, kineticist probably being the best just due to being their completely own set of rules.

I detailed the restrictions in the post. Obviously, you can't exclude stuff like ability scores or skills. Can't play PFS without it being a legal character.
And maybe allow general items derived from spells like potions, scrolls, and wands. But they can't be made from a Core spell. So, Wands of Infernal Healing instead of Wands of Cure Light.

Rapier is Core equipment... don't think that'd work out very well.. For weapons you're pretty much limited to Eastern/Racial weapons.... ouch.

^This non-Core challenge sounds pretty cool and it makes me wonder about something else - would 'themed' tables/groups be something that people might get a kick out of from time to time? Things like Hmm's all-tengu games that she ran, stuff like that.

People do them from time to time. I was in an all Grippli table a while back. Another table was (accidently) almost exclusively female followers of Shellyn. We had Pau (an ugly monk) to keep us in line though. That one was a lot of fun.
GMs can easily theme a table with their requests and they can be great. Go for it!

Can I assign GM credit to a character that is playing in a PbP, so that hey have the chronicle waiting for them once they finish the PbP game?

To further confirm this, I am posting a link to Compton’s Statement on PBPs and applying GM Credit.
There are a number of situations that arise when we consider the play-by-post format that I don't believe factored heavily when prior campaign staff wrote and revised the Pathfinder Society Roleplaying Guild Guide; it makes the reasonable assumption that nobody could play or GM multiple games simultaneously. With that in mind, I acknowledge that I might be inadvertently contradicting an existing rule that could stand modification or an exception.
Here are my thoughts. Let me know if any of these would have problematic ramifications.
Once a character has started playing an adventure, that character should not receive any further credit until the adventure has concluded. This would not stop someone from assigning further credit to that PC (such as from GMing), but none of that credit would take effect (e.g. grant gold, Prestige, or XP) until the current adventure had concluded. This is to say that no character should spontaneously level up in the middle of an adventure.
At the end of the current adventure, a PC also receives credit for any pending Chronicle sheets, much as if the PC had a bunch of Tier 7–11 GM credits and had just reached 7th level. Similarly, assigning high-level GM credit to a PC that dies before redeeming that credit means that the credit is also lost.
Because a GM receives full credit for running a game, I feel pretty comfortable trusting a PbP GM who starts several such games at about the same time to assign the resulting Chronicle sheets in whatever order—even if those games end on different dates due to different scenario lengths or play speeds. I would, however, encourage GMs to do this only with adventures in the same category, not starting a scenario and a module simultaneously, finishing the module months after the scenario, and claiming module credit first.
Things get sticky in the above example if the GM receives credit for games X and Y, starts playing game A, and finishes GMing game Z only after game A has started. I assume that this would default to the first bullet point, and the GM would just have to assign the credit to that character after game A concludes or assign the credit to a different PC. Would this miss anything or introduce additional difficulties?

I think I'll refrain from GMing this one. My first kid is due in February, so I think I'll be a bit distracted. Ok, more than a bit distracted. Super happily distracted. Perhaps I'll sign up to play with a simple character that I can run from my phone.
