Briggi finds out that the trap door leads into a dirt-floored crawl space 3-1/2 feet tall with the same dimensions as the room above. Amid numerous blocks of various types of mundane wood lie four simple but solid coffins. The coffins are open, the bottom filled with dry, gray soil and a pale 'dead' person in the coffin.

That crawlspace is under the floor. You'd have to lift the coffins out of there through the hatch to get it towards the others. And they are really heavy with the 'corpse' and the dirt in them. So at least a STR check.

Do I recognize the corpses as undead? What do I know about this kind of undead? In particular, will they wake up if Briggi starts moving coffins?

In a much more mundane question, are there any exits from the crawlspace other than the trapdoor? Is the hole to the alley outside visible, and is it blocked enough to prevent passage?

Narciso:
You recognize those 'dead' as vampire spawns. Very dangerous and hard to kill undead. Other than skeletons, they don't turn into dust when killed. There are special methods that need to be used to destroy them. Exposing them to sunlight, drowning in running water or putting a stake through their heart and decapitating them and sprinkling the head with holy water.
But to get them close to that, silver weapons are helpful.
Also one needs to avoid getting the life sucked out by them or being bent to their will.

"The corpses are vampire spawn - deadly dangerous. Silver weapons are much better against them. They can suck the life from you, and bend minds to their will. To kill them permanently, you need either sunlight, drowning them in running water, or driving a wooden stake through their heart, decapitating them, and sprinkling the head with holy water...
