What would be the ruling on summoning a creature through an arrow slit? How much line of sight is enough?

It depends on the light level behind the arrow slits--if you can't see the location you're summoning to, you can't summon a creature to it.

This will work best if Corbrae puts a dancing lights light just inside the arrow slit. Unfortunately, Viridian is going to have to stay at least partially in view while he casts the spell.

Agreed. He will start casting within LoS of an illuminated slit, taking as much partial to improved cover as he can.
Viridian moves to peek around the corner and once dancing lights are in position he begins to cast (SNA2)

Viridian has to be at the corner for his spell to reach the room behind the arrow slit, so once he's in position she leans out behind him and sends a light through one of the slits. With that, the druid can see enough of the room to summon a creature there.

Masks hang on the wall near the door opposite the one just opened; each consists of a brass nosepiece with cheek guards, from which a veil of red fabric hangs.
