I picked this up in my travels.
General Tso's Chicken
Sauce
1/2 cup cornstarch
1/4 cup water
1 1/2 tsp minced garlic
1 1/2 tsp five spice powder
3/4 cup sugar
1/2 cup say sauce
1/4 cup white vinegar
1 3/4 cup chicken broth
Meat
3 lbs boneless chicken thighs, cut into large chunks
1/4 cup soy sauce
1 tsp white pepper
1 egg, beaten
1 cup cornstarch
1 cup olive oil
oil for frying
2 cups sliced green onion
16 small dried chili peppers
Mix the sauce ingredients together stirring until the sugar dissolves. Refrigerate until needed. In a separate bowl mix chicken, soy sauce, and white pepper. Add corn starch and mix until chicken pieces are coated evenly. Add olive oil to help separate chicken pieces.
Divide the chicken into small batches and fry in 350 degree oil until crispy. Drain on a paper towel. Add a small amount of oil to a wok and heat until the oil is hot. Add onions and peppers and stir fry for 30 seconds to 1 minute. Stir sauce and add to wok. Stir in the chicken pieces and cook until sauce thickens. Serve with steamed white or brown rice. I prefer brown because it is more healthy.

Peanut Butter Waffles
Ingredients:
• 1 cup Hungry Jack® Original Pancake & Waffle Mix (Add Milk, Oil & Eggs)
• 2 tablespoons sugar
• 1/3 cup Jif® Extra Crunchy Peanut Butter
• 1 large egg, beaten
• 1 cup milk
• 2 tablespoons Crisco® Pure Canola Oil
Preparation Directions:
1. HEAT waffle baker. Combine pancake mix and sugar in medium bowl.
2. MIX peanut butter, egg, milk and oil in separate bowl. Add to dry ingredients. Beat just until blended.
3. BAKE in waffle baker, following manufacturer's instructions.
Yield: 2 (9-inch) waffles

Actually it's surprisingly good. Goes together very well. But if you're squeamish about it, they're also good with jam or honey. :)

Bacon-Cheeseburger Potato Pie
Ingredients:
• 1 1/2 pounds extra lean ground beef
• 1/2 cup plain bread crumbs
• 1/4 cup finely chopped onion
• 1/4 cup Dickinson's® Tomato Ketchup
• 2 teaspoons prepared mustard
• 1/2 teaspoon salt
• 3 slices bacon
• 1 1/4 cups water
• 3 tablespoons butter
• 1/4 teaspoon garlic salt
• 3/4 cup milk
• 2 cups Hungry Jack® Mashed Potatoes, flakes
• 1 cup (4 oz.) shredded Cheddar cheese
• 1 medium tomato, chopped
• Chopped green onions
Preparation Directions:
1. HEAT oven to 375°F. Combine ground beef, bread crumbs, onion, ketchup, mustard and salt in medium bowl. Mix well. Press mixture in bottom and up sides of ungreased 9-inch pie pan. Bake 15 minutes.
2. COOK bacon until crisp. Drain on paper towel. Cool and crumble.
3. COMBINE water, butter and garlic salt in medium saucepan. Bring to a boil. Remove from heat. Add milk. With fork, stir in potato flakes. Stir in 1/2 cup cheese.
4. REMOVE partially baked beef crust from oven. Pour off any drippings. Spoon potato mixture evenly into crust. Return to oven. Bake an additional 10 to 15 minutes or until beef is thoroughly cooked and potatoes are heated.
5. REMOVE pie from oven. Top with tomato, remaining 1/2 cup cheese and crumbled bacon. Return to oven. Bake an additional 5 minutes or until cheese is melted. Remove from oven. Top with green onions. Let stand 10 minutes. Cut into wedges to serve.
Yield: 6 servings

Cook Time: 35 min

Apple Fritters with Spiced Syrup
Ingredients:
• Crisco® Pure Canola Oil, for deep frying
BATTER
• 1 large egg, lightly beaten
• 1/2 cup milk
• 1 medium apple, peeled, cored and chopped to make 1 cup
• 1 tablespoon Crisco® Pure Canola Oil
• 1 cup Pillsbury BEST® All Purpose Flour
• 1 tablespoon sugar
• 1 teaspoon baking powder
• 1/4 teaspoon ground cinnamon
• 1/4 teaspoon salt
CINNAMON SUGAR
• 1/2 cup sugar
• 3/4 teaspoon ground cinnamon
SPICED SYRUP
• 1/2 cup Hungry Jack® Microwave Ready Regular Syrup
• 1/4 teaspoon ground cinnamon
Preparation Directions:
1. HEAT 2 to 3 inches of oil to 365°F in deep fryer or deep saucepan.
2. COMBINE egg and milk in a large bowl. Stir in apple and 1 tablespoon oil. Combine flour, 1 tablespoon sugar, baking powder, 1/4 teaspoon cinnamon and salt in another bowl. Add to egg mixture. Stir until just mixed.
3. DROP by tablespoonfuls, a few at a time, into hot oil. Fry about 4 minutes or until golden brown. Turn as needed for even browning. Remove with slotted spoon. Drain on paper towels.
4. COMBINE 1/2 cup sugar and 3/4 teaspoon cinnamon in a re-sealable food storage bag. Gently shake fritters in cinnamon-sugar mixture.
5. MIX syrup and 1/4 teaspoon cinnamon in a microwave-safe bowl. Microwave 30 seconds or until warm.
6. PLACE fritters in a shallow serving bowl. Drizzle with warm syrup. Serve warm.
