From my perspective:
1)
- Haven't done any of the Seeker content (12+) - just flagging that.
- Havent done Ruby Phoenix.
- Have done Fragments, Serpents Rise (ran it a heap for 5 Star).
2)
- High level Starfinder I am missing as it hasn't been a staple of the PbP or my local community so I have weird gaps. Most of the low content I have GM'd or Played (hammered that game to get 5 Nova).
3)
- I have played very little PF2. Enjoying it so far, seems like a far simpler game coming from PF1/SF. I have a stable of low-level characters.
4)
- Always sad to lose a willing GM!

The discount and bonus on Day Job checks that the Entrepreneur boon provides increase to 10% and +10 respectively. When another PC attempts a Day job check, she gains a +3 circumstance bonus on the check and can earn 200gp on a result of 45 or higher.

I'm always game for more adventures. Reign of Winter is my only other active campaign. I actually haven't played Fragments of Antiquity, I haven't played much of anything in season 9 or 10. I've played Siege of the Serpents (didn't enjoy it, specials are pretty dull story-wise) and Ruby Phoenix Tournament. I've played and run Serpent's Rise, but I'd play it again for no credit, as it was pretty enjoyable to be an Aspis character. Serpents Rise may be a 4 or 5 star level GM adventure, can't remember.
I've stuck my toe into Starfinder. I like it ok. I remember running the Intro adventure and playing a very bouncy K-Pop song to stand in for Starsugar Heartlove by Strawberry Machine Cake.
I've also stuck my toe into 2e. I can manage the basics, but I don't love the system.
All that said, I think as the GM you should decide what you want to run, since you'll be doing 90% of the work.

I am traveling today (I'm cheap) so I will catch up tomorrow. I don't have the bandwidth to learn a new system so I would opt out of Starfinder, which I've never played. As a matter of fact, I will be ending my involvement with 1e when this series ends, to condense all my play into 1 system, but am happy to play this through, however long that is.
I would vote for 1 or 3. I can trade GMing in the future, but am full right now.

PbP, in general, has taken a big back seat to my life. I like this group (and Ebonfists GM style) a lot and would happily play in any of the options provided. I just don't have any starfinder or PF2 characters so I would be starting at level 1 in either of those scenarios.
I have never done seeker 1e content- Kal is my first character to "level out". I would be up for any PF1 seeker content.
IRL I play/GM exclusively PF2 and enjoy it quite a lot, but as mentioned I would be creating a new level 1 character for society purposes
I have played starfinder 2-3 times. I might have an old character somewhere? This would be my least preferred of the three options- mostly because I so unfamiliar with the system/rules/etc.

As mentioned above, I've played Ruby Phoenix, but it was years ago and I don't really remember the details. If you don't mind letting me play anyway, I can bring someone along, and just forego the chronicle sheet. I thought maybe a healer type (lvl 12 life oracle).
I've played and run the Eyes of the Ten four-part cycle. It's a pretty epic storyline and well worth doing if you get a chance. Not sure you learn much lore per se, though it sorta explains why a particular Venture Captain doesn't appear again after Season 2.

Need to do EoTT at some point, I have had a few GMs promise locally, but then it was either 'the case of the vanishing GM' or 'We can do it in one weekend, trust me bro' - which sounds pretty unlikely.

I'm checking my stable of who would work, I have a Cav/Rog, Cav, Witch, Hellknight, Rogue, Eagleknoght all sitting at 11/12, or a Rangbarian meataxe.
Suspecting this wont have much need for a rogue at a tournament, nor jousting, nor a Hellknight for the forces of Evil and Chaos,nor the Eagleknight with his armada of ships, and we look like we're wanting more melee - could be the Rangbarian.

Kal (11) will happily play ion the Ruby Tournament.
That means there is at least one front liner, but the more the merrier.
