Pretty much what it says on the tin. Rise of the Runelords got a Hardcover edition for its anniversary, and I personally loved being able to get the whole bundle in one easy-to-carry and durable bundle with updated rules for the transition from 3.5 to Pathfinder.
My only regret is that it is presently the only hardcover collection like it for all the Adventure Paths.
I'm wondering if there are any Adventure Path's the rest of the community would enjoy being able to pick up in a collection, or if I'm just one lone strange little bloke for wanting this.

Wrath of the Righteous.
The older APs don't really need updating as they're pretty easy to up-convert from 3.5e, but from what I've read Wrath is on the easy side. Given wider playtest feedback over the last year, I'd like to see Wrath formally scaled up in deadliness now that Mythic rules are better understood.

They'd have to move it to Golarion to do serious justice for it, however, and that would involve some big rewrites.

In fact, most of what makes Age of Worms awesome would go away if it were moved out of Greyhawk, in my opinion.
But yeah. It's not one we ca go back to. It's owned by Wizards of the Coast.

Absolutely nothing.
But to make it a PAIZO product, they'd have to rewrite it from Greyhawk to Golarion. That would take some serious rewrites.
I even have some stories I wrote about the Age of Worms AP's, sitting on my Google Account from way back then. I loved that AP.

Which is one of many reasons why we wouldn't do it, frankly. An Age of Worms without Kyuss, Dragotha, and all the rest would be hollow and unfufilling; Age of Worms (and Savage Tide) are as much celebrations of all the things and stories and characters I grew up loving in D&D as they are adventure paths.

Second Darkness, because James has said previously that he thinks he can "fix" the "problems" with it and I'd love to see what that would look like (and having two versions of it would be cool).
Excepting that, either Curse of the Crimson Throne or Legacy of Fire would be equally as good.
The idea about updating Wrath of the Righteous is intriguing.
And, finally, I'd like to add that Savage Tide is a truly awesome campaign.

Also, is it just me or did anyone else get hopeful/excited that JJ is posting on here and didn't flat out say they would not be doing anymore hardcovers?
You're not alone.
As for all the talk of Second Darkness,

As I understand it, the high tier stuff was not written with a full appreciation for how powerful mythic characters get. As such, the last half is much too easy.
I read a comment from James suggesting that a better approach may have been to treat it more as in the superhero RPG genre, rather than as a high powered FRPG. I like that idea and think it would bring real value to a reworking/compilation.
Granted it's a lot of work and probably not that commercially viable.

Council of Thieves. I know it's not the most popular AP by a longshot, but that's why I like the idea - if any of the paths need expanding, converting and making more awesome, it's Council. Especially of the 3.5 era ones.
Of course, I kinda suspect that's what the upcomming Hell's Rebels (I think it was called) adventure path kinda is, and that an updated Council of Thieves might step on it's toes a little. But still! It would be cool to see one of the less loved sets turned into something better.

Why do people keep saying this?
for the last time: Council of Thieves was the first Adventure Path to utilize the Pathfinder Role Playing Game Rules, it says so in the very first forward of book one

It was written while the rules were still being developed (or they were very new, anyhow).
That's part of the reason it ended at a significantly lower level than the others, for eexample . There are likely to be other things that paizo would have done differently, if they knew the PF rules better, IMO.

Even so, we have since had Advanced Player's Guide which added tons of options, and most recently the Advanced Class Guide which has added tons more options. And we're going to be getting Psionics soon with the Occult Adventures book. Then there are more bestiaries, alternate racial traits, the "Ultimate" series, etc.
There's a lot of tweaking that can be done between the ghosts of Pathfinder Past and Pathfinder Present. Sure, a GM can be expected to implement such changes in the game on their own initiative but that's a huge workload for someone to take on to give the ole' spitshine to classic Adventure Paths.
Now I'm kinda tempted to purchase one of the older AP's, go over it and lay out an update with suggestions/builds and alternate monster selections. It'd be a nice community project if nothing else.

Second Darkness. Having a hardcover Curse of the Crimson Throne would be great, but a hardcover for Second Darkness would also be a chance to smooth it around the edges. Many criticise the AP and not without cause, but beneath the flaws there is a REALLY cool AP with several really get adventures. I wholeheartedly believe that a Pathfinder updated, retconned Second Darkness AP hardcover would be an amazing product and a perfectly solid AP to run, up there with Reign of Winter, Rise of the Runelords and Shattered Star (which puts it above most APs).

Hmm, I'd be solid with Kingmaker as a hardcover.
As for hardcover's that are sort of like AP's or as long as them at least which I've gotten you have
Shackled City
Rise of the Runelords (already mentioned in this thread)
Rise of the Drow
Rappan Athuk
And to a degree, though not quite as long could be Emerald Spire.

Second Darkness. While Legacy of Fire and Curse of the Crimson Throne need mechanical updates, Second Darkness has more fundamental flaws. And just think of the potential tie-in books:
Riddleport Campaign Setting (similar to Magnimar, Korvosa and Kaer Maga)
Revised Darklands Campaign Setting
Kyonin Campaign Setting
Drow of Golarion
Of all 3.5 APs, Second Darkness has the greatest potential of improvment.

I would be equally happy to see either Curse of the Crimson Throne or Second Darkness updated to PF system and hardcover status.
CotCT because it was the second Golarion AP and a fantastic classic (not to mention it's 3.5).
SD so that it can be fixed and improved to suit it's rather epic storyline - talk about world-shaking events! :) (Also, because it's 3.5.)

Kingmaker.
Why? is it only because its mostly out of print? why can't you just use the ultimate campaign stuff, switch out some monsters for other ones from newer bestiaries, and tweak an NPC or ten.
honestly people, Kingmaker is A) PFRPG already and B) already superb so i'm not sure why it would warrant a hard cover.

I'm going to say Kingmaker, but if it were to come out in hardcover, I'd love to see a sort of "Kingmaker Plus." I'd like to see it overhauled a bit to take into account the past decade or so of development, including tweaks that take into account the UCAM rules, some expansions of the fluff (particularly things that could be dropped in), and a revision of quests and encounters. (Currently, a lot of the quests and encounters assume that the PCs will be doing exploration and fetch quests. It'd be interesting to see them replaced with quests and such that are more suited to lords and ladies.
I don't know what the legal implications would be, but in my idealized version, this Kingmaker Plus would also include the mods and expansions GMs have created for the module, including such gems as Dudemeister's Monster Kingdom and Redcelt's Game of Thrones.

Jadeite has a great idea above (and great business acumen to boot).
I would also love to see Second Darkness get a hardcover reboot. While I think Curse of the Crimson Throne is a better adventure, it's set in Varisia and Paizo has already been shown a great deal of love to that area with Rise of the Runelords, Shattered Star, and Season 4 of Pathfinder Society. While Second Darkness starts in Riddleport (also Varisia), the adventure path explores the northwest territory of that land and focuses more on the elves than the Varisians and Shoanti people.
I've been longing for a Kyonin campaign (Treerazer anyone?) for years, and the Second Darkness reboot can easily support that and a bunch of other nice books (that Jadeite mentions) across the needed 6-month span of time.
I would also love to see the Winter Council of Elves get a spotlight and a revised Second Darkness with a Kyonin spinoff could show us more about that devious organization. Does anyone remember the Eldreth Veluuthra from Forgotten Realms?

Second Darkness is the most flawed AP, but it has some awesome potential. I think it would be the one most in need of a makeover.
But if we're not talking about correcting issues, then I'd say Kingmaker. And since this is a complete fantasy, why not make it a big boxed set with a player's guide for Kingdom building and some play-set style punchout cardstock city building materials.
Yep.

And a VHS tape with an animated film! I really wonder why they stopped doing those.
