Seriously, Darvik doesn't even try to fight anything but giants. If there aren't giants to fight, and he doesn't need to do it to protect the party, Darvik doesn't bother fighting unless something directly attacks him.
The same will be true of any undead we run into, and with the undead, unless it's one big bad undead, he'll use his gods resources to fight even the undead instead of going hand to hand on them.
