You are right, the thrown damage is 1d4-1, so 3 in this case. The sneak attack damage, rolled below, makes it back to the original 8.

Since no one tried the medicine check to treat wounds on Vivekanandra, she'll drink the minor healing potion. She does not have healing toolkit, but I'm assuming the ship does.

"Good job, Grannik," Vivekanandra says as the big guy returns to the surface with the goods. "Uh Oh! If it's not one thing, it's a sea serpent attack."
The wizard concentrates on her spell-casting and gestures toward the serpents and three faintly glowing motes of energy streak toward the beasties, sending ripples of force into their flesh. Two at red, 1 at blue.

Force Barrage, 1 at blue: 1d4 + 1 ⇒ (2) + 1 = 3

Round 1 (ongoing):
Herkemer tags the unwounded serpent, and Vivekanandra follows up with a barrage of force darts that leaves both of the foes looking pretty injured.
The red serpent reveals that while it may be small, it's long enough to stretch out a good ten feet without any real effort. It bites Herkemer for 6 HP piercing damage, then wraps itself around the rogue and squeezes for another 6 HP bludgeoning damage, with a DC 14 basic Fort save.
The other one launches itself at Grannik with its spines bristling and rakes at the ranger when it's close for 6 HP slashing damage, with a DC 14 basic Reflex save . Then it bites him for another 7 HP piercing damage.

Grannik avoids the razor-sharp spines with great agility. Then the halfling rushes forward into battle. His first strike draws out the serpent, allowing his second attack to tear out its throat. It falls writhing to the deck, spewing black blood.

Herkemer kind of expected the bite attack, but the squeeze surprised him. He struggles to try to limit the bludgeoning damage

Vivekanandra moves cross the deck to get a clear line of attack on the last serpent slithering. Along the way she draws a dagger and hurls it at the beast. She stops next to a mast with a belaying pin handly, considering using it to hurl at it next using a telekinetic cantrip.

She surprises herself with an accurate throw at a weak spot on the serpent's neck.

Herkemer: not that it's going to matter, but the serpent imposed the grabbed condition on you. You're off-guard and immobilized, and it's a DC 5 flat check to perform any action with the manipulate trait.
Between Grannik's spear and Vivekanandra's dagger, the last sea serpent falls.
Out of combat!
The trip back to Iceferry is as uneventful as the first leg wasn't. Venture-Captain Torrsen is delighted when you return with the body and the gorget. "This will greatly please the Grenskuldrs. Thank you! I'll make sure you're all on the invitation list for a very special event coming up soon."

Herkemer thanks Grannik and Vivekandra profusely. "I was in a bit of spot there since the snake had me held fast, and hurt pretty badly. Good throwing and even better timing, I must say!"
He takes any ministration of healing available or otherwise just naturally lets his wounds sort themselves out until the next time the Society calls.

The captain nods at Grannik's question. "We're not desperate enough to try to eat them, and they're not big enough for their spines or teeth to be worth much. Probably tap the teeth out anyway, though--give the scrimshaw artists in the crew something to practice on."
