It's beatable, but it's definitely not a stand & bang kind of encounter.
I did play this with GM Tiger before and got KOed.

Regarding the repair check and the 10d6: I think paizo auto generated the d6 after the 10? Not sure.
Also, in regards to how wounded works with Meat Wagon:
While constructs are usually immediately destroyed at 0 Hit Points, your construct companion is a little harder to destroy than other constructs are. When your construct reaches 0 Hit Points, it becomes broken and begins sparking and might be destroyed if you don't Repair it. This works the same as the normal dying rules and determines if your construct is destroyed, with the following two changes. First, most effects that end the dying condition don't work to save a construct companion, but a construct can be stabilized using the Administer First Aid action, using the Crafting skill instead of Medicine. Second, instead of gaining and tracking the wounded condition, if your construct becomes broken in this way more than twice within a 10-minute period, it's destroyed, and you'll need to reconstruct it by spending a day of downtime.

Ya that was a mean monster for a mostly melee group for sure. Glad we got some lucky crits going our way at the end.

Not at all! There are actually mentor boons to help now when people have under leveled PCs involved. I don't really know much about them, and also don't know how much they would benefit someone that is still in the same tier. Maybe someone with more info could chime in on that. They are purchasable with ACP.

shouldn't be an issue at this point. Mentor boons only come into play when you're playing a higher tier (e.g. 3-4) while at the lower level (i.e. the game is set as tier 3-4 but your level is 1). 99-01 is set for lvl 1-2 so there shouldn't be an issue.

In the off-chance that I was going to get a TPK, the scene I had prepared was:
You all wake up in Solvatar's salon with healers leaning over you. In the background you see the mimic with an expression that appears to be concern, as he explains to Solvatar that "I swear! I didn't HIT them too hard!!"
The other idea I could use is to have the mimic standing over you and performing CPR with its pseudopods... :)

Stitch is a far better medic now. Battle Medicine and I can use it a second time on someone who's already gotten it once per day.
I'll also now be putting in risky surgery, when the extra healing makes sense, if players will allow it. There's a lot of synergy between risky surgery and the medic dedication. My treat wounds checks look like the following:

Archetype Medic: Prerequisites Battle Medicine; trained in Medicine
You become an expert in Medicine. When you succeed with Battle Medicine or Treat Wounds, the target regains 5 additional HP at DC 20, 10 HP at DC 30, or 15 HP at DC 40. Once per day, you can use Battle Medicine on a creature that's temporarily immune. If you're a master in Medicine, you can do so once per hour. Special You can't select another dedication feat until you gain two other feats from the medic archetype.

Note for future GMs, about Summoners and Eidolons doing skill checks.
There are skill checks meant for each PC, and skill checks meant for each entity. If it's meant for a PC, either the Summoner or their Eidolon gets to roll, but not both.
So if the scenario says "Each PC can make a Diplomacy check" then I have choose whether Bella or Khiari makes the check. This is done so I can't cheat by getting 2 rolls for the price of 1.
Meanwhile, if "Each PC makes a Perception Check to notice the ambush" then Bella and Khiari will make checks. Every entity would be watching for trouble.
