Golarion's geology is a bit outré, because at the core of the planet isn't a core of hot molten goodness, but an eldritch horror from beyond this plane (Rovagug). If it shudders in its slumber, the earth quakes.
I'm fairly sure there's no official map of Golarion tectonics, never been published. Of course none of this unusual geology means there couldn't be tectonic plates either, just that the mechanism below them is a bit different.

Just a small note that IIRC Rovagug's cage is actually a demi-plane coexisting with the core of Golarion rather than the planet's actual core.
For trenches, I would go with wherever you need it for your story.

It might be faster just to look at an egg that is hatching and use the cracks on that to define your tectonic plates.

We kept plate tectonics in mind when designing the map, but none of us who designed the map are master geologists, so it's not entirely scientific. There's for sure no map of the plates out there, and I'm pretty sure none were created in the first place anyway. Feel free to drop a trench in anywhere that looks good to you.

Isn't it a bit hollow earth with the darklands? That makes plate stuff a bit difficult.
Although it gives me neat ideas for 'solving the earthquake problem' and it turns out someone is lobbing cannon shots at the ceiling .....
Golarion is fairly Hollow Earth-y, but it's also within the bounds of what we'd expect a plate to handle from what I can tell. Orv, the deepest layer of the Darklands, is 8K feet below the surface--which I'm assuming means sea level--and probably extends a bit further down, depending on the relative height of the magical chambers that make it up. Crustal thickness hovers somewhere around 15km, plenty large enough to swallow Orv and not be worrying about breaking into mantle or anything.
