What is something you've seen rarely, or maybe even just once, at your PFS tables?
I've only seen a non-multiclassed non-archetyped Fighter once. He wielded chakrams so he could attack from range or melee with the same weapon type.
I've also only seen a pure Flowing Monk woodchipper once (basically take the frontline and trip/reposition/sicken enemies into following allies' full attack range).

It's really refreshing and relaxing to be able to sit down with people who are willing to run with pretty much anyone and don't get locked into that kind of thing.
The rarity of such a thing does attenuate when it does happen, though.

I have a feeling each of our "only once" are unique.
I think it really depends on each lodge's meta. I come from a smaller group (less than 10 regulars, defined at attending at least 50% of sessions in a given year) with no to moderate rpg experience. We have a lot of players who just enjoy two handed weapons problem solving. As for my con experiences, it's just luck of the draw I've never seen any of those elsewhere.

I am blessed to have a very large play group and therefore I get the chance to see a lot of things. I will say that I have yet to see a pure monk that was not a Zen Archer.
My first character is a pure monk (well unchained now). He will be running in Eyes in a couple of weeks.
Maybe even more unusual, he is dex based, not str based.

It should be doable without the Agile property though I'd have to build out a normal Occultist and not my MADest of all the builds in Pathfinder Occultist.
EDIT:Yeah its easily doable without the Agile property with the Tiefling's stat array.

I've seen one druid, played for one day, by a player who was trying PFS and decided it wasn't really for him. I have my own grippli druid in the wings but he's just a bundle of potential and GM credit right now.
Likewise, rangers. I have seen some slayers but not a single ranger around here. (I have a ranger who totally does not act like a ranger thanks to a heap of archetypes, but again... GM credit baby. I might have too many characters.)
I also don't think I've seen any shamans in play 'round these parts.

I have seen everything in this thread. At least once. The meta in my area has every class, tons of odd races, and a guy that loves chase scenes even the old ones and even when he fails them, they are hilarious to him and his enthusiasm make them much more fun.
- Kinetist with a con above 20.
- The near death broom beat down twice. I was the gm for one.
- Blindness/deafness cast to make the target deaf was just to taunt a caster the fight was basically over but I guess it counts.

Still not sure how to get an adventurer out of those classes.
Horacio is a Mendevian crusader armed with a heavy shield and red Dragon-hide breastplate.
A devout follower of Iomedae Horacio has joined the Pathfinder Society after seeing all the help they provided in the most recent crusade.
Having recently finished his official Pathfinder Training, he's enthusiastic to purify evil in cleansing flame with the holy might of Iomedae.
Mechanically Horacio is a fire shaman, using Lore to learn a variety of fire spells to make things work. He curses things to be vulnerable to fire and then blows them up, with maximized scorching rays if needed. He's also got some strong skills with good scores in diplomacy, perception, sense motive and survival.

Medium, Hunter, Brawler, enchantment-focused caster (oddly enough), summoning focused caster (aside from my own), two-weapon fighting rogues.
It's a weird meta over here, filled with druids, bards, and random multiclassed monstrosities.
I personally have all of those except for medium/enchantment-focused caster.

Did Confirmation recently with an entire party untrained in survival. We choose to do a forced march early on, and then had to scour the forest for supplies. 5/6 players were fatigued before our first combat encounter. Our GM commented that this is first time he's had players fail the survival checks. It was also my first time seeing it, too.
It was a "great" learning experience for the party's barbarian....

They aren't really that easy as they suffer from some problems that balance them. Unless you pay them as pure support in which case they may be one of the best classes for that.

I once had an all-Human party. Part of 5 or 6 even, IIRC.
I haven't met a Gnome yet I didn't want to punt all across the battlefield.

Occultists are amazing. They can pretty much do whatever you want. Shamans are incredibly tricky, but I'm absolutely loving my Grippli Shaman.

So, when I look at my local lodge, since we have a small group where almost all of them are new to PFS, Pathfinder and in some cases RPGs, I have a very skewed view.
I haven't seen anyone use anything out of Ultimate Combat. Or Intrigue. A number of them have the ACG or APG, because when they ask what books are good, I usually say start with one of those two. (or Unchained if the person's interested in Rogues)
Obviously when I go to the larger more established lodge 50 minutes away, it changes.
Though (and I'd have to check my character notes), I'm not sure if I've played alongside a single-classed wizard, even at Gen Con.

Never seen an unchained barbarian. I don't think I've seen a brawler, either.
Other than that, I think we've got just about everything around here. Though occult classes other than psychic and kineticist are pretty rare.
Sammy, if you want to see a non-multi, non-archetype fighter, come play with me. I've got two of them, one in Core (for now) and one standard.
Occultists seem very easy to build as a front liner. Just put all your build points in str, con, and int, be an elf or half-elf, get a breastplate and two handed weapon (elven curve blade!), and use the elven favored class bonus every level. Take transmutation as your first implement for all the buffs, followed by abjuration and divination to keep you alive. Easy.
Building a non-melee occultist is a little tougher, but not that tough. The class has lots of options, and unlike the medium class, they're almost all good options. It's just a matter of coming up with a coherent build in advance, so you don't spread yourself too thin trying to do everything.
