Trust me when I say you should pick whichever one really inspires you. GM burnout is the usual cause of PbP death.
PbP adventure paths are essentially a commitment of years rather than months (with one noteable exception of some seriously hardcore posting that finished Skull and Shackles within a year).
Also trust me when I say you'll have ample applicants regardless of which AP you run :).

I'm running a Kingmaker campaign since last week over at Storium.com.
I really love the Pathfinder campaign setting, but I have stopped playing using the Pathfinder RPG rules some 2 years back when our pen-and-paper round stopped (people moved away and pbp was no option for them). So Storium was a nice alternative, less rules, more storytelling. Since I crave the Pathfinder game world, I'm now looking for an additional pbp round here.

I came here to second this: pick what you'd like to run. A reactive and motivated GM is the most important thing in a PbP. It's really disheartening to find a PbP that you like, only to see it die sometime later. :(
As a player I'd stress on something, tough (I mean I think that's important, but maybe it's only me): work on your recruitment thread. It's like your business card! Technically, you only need to write what AP you want to run and the build requirements, but seeing only a single line with
"I want to run CoT, 20 build points, all race allowed, no summoner or gunslinger, ready, set, go"
puts me off. A fancy recruitment post with an introduction to the AP (bonus points if you wrote that!), your style of DMing(bonus point for a sample here!), number of posts, player and DM expectations, paragraphs and good formatting goes a long way to make people submit a character to your campaign: except some people (like me :P) who looks at the DM posting history and things like that, most people look only to the recruitment, so make it count!
PS: I support your idea of not running Kingmaker: it will take a decade or two in PbP :P

Ones I'd be most interested in playing (No specific order):
Curse of the Crimson Throne
Second Darkness (Got into the first encounter, DM quit before enemies acted).
Legacy of Fire
Carrion Crown
Shattered Star
Jade Reagent (Love the theme from the description).
Mummy's Mask (Would be pretty sweet/have an egyptian (and oriental as well) cultural fetish).
Wrath of Righteous (though not on the table it seems).
I've been in Kingmaker and Rise of the Runelords so would prefer something different myself.
Good luck on choosing!

ROTR
Shattered Star
Wrath of the Righteous
Second Darkness
Council of Thieves
KingMaker (if you find a way to speed run it. Like one book equals 4 months at most)
Reign of Winter (as long as you aren't marking up monsters or adding extra ones without warning us ahead of time, a previous DM admitted to doing that, and it was frustrating, the game is already hard enough. It was a bad move not to tell us)
Mummy's Mask (as long as a lot of it is changed since I'm dming one and I'm on 2nd book right now. Throw the rooms in reverse or whatever.)
Or if you want, you can really mix things up, yes I know this means a messed up story, but something like book 1 of RotR, book 2 of Wrath, book 3 of Mummy, book 4 of Reign of Winter for an epic story of your own.

I would love to play in a Reign of Winter game. But then, I would also love to play in several others like:
Curse of the Crimson Throne
Shattered Star
Iron Gods (when it comes out)
Legacy of Fire
Jade Regent
Second Darkness (the beginning intrigues me, if not the rest of it)
I am a player in a Rise of the Runelords game that has been active for six years now. The DM said it is the third oldest continuous game on the boards, but I never checked this.
In addition, I am a player in Kingmaker, Serpent's Skull, Skull and Shackles and Mummy's Mask that is why I did not list them.

Updated the list to eliminate Wrath, as I misread the initials.
Also you are lucky to have them all. Some of those APs are 50-100 bucks just for the first book.

I have started a recruitment here for Crypt of the everflame, mask of the living god, and city of golden death, until I decide which AP I want to run.
