Does anyone know of a good way for a PC to be a mad-scientist, monster creator?
The following are not options due to GM banning or just causing too much arguing:
Simulacrum
Alchemical Simulacrum
Trompe L'oeil
This might just leave me with craft construct, craft poppet and grow plant creature but I'm hoping there are more options.

There are quite a few Alchemist Archetypes that have this sort of feel to them. The Preservationist seems to 'bottle up' creatures for use later to cast 'Summon Nature Ally' spells.
But, if you want long lasting creatures: Promethean Alchemist gets a construction companion. The Homunculist gets a Homunculist familiar. Really, check out the archetypes.

There's animate dead of course, or late-game animate objects. The vivisectionist alchemist is all about this and has relevant tricks. Alchemists can also make (low CR) oozes with the right discovery, and the preservationist alchemist fluffs monster summoning as bottling monsters - you could probably do the same with the summoner class. There are wondrous items which function as monsters (figurines of wondrous power, migrus locker, probably more).

The Vivisectionist Alchemist is all about wierd fleshwarping/torturous transformations. Vivisectionist stacks with Beastmorph in case you, yourself, also wants to turn into a monster.
The Ectoplasm Master-Reanimator Alchemist can pull off a sort of ooze necromancer, creating some interesting monsters, as well as an Ectoplasmic Servant.

Depending on what you're going for, this could just be done as flavor text on a Summoner and his Eidolon. Change the normal descriptions of casting and arcane gestures, to complicated procedures conducted in a laboratory, and "BOOM!", instant Dr. Frankenstein. Plus you have the advantage of continuously "experimenting" on your creature, as you level and add evolutions.

And if you take the Evolutionist archetype, you can eventually change your eidolon's evolutions every day.
