I thought I'd do the community a solid, if this is in the wrong spot feel free to move it.
With the creatures for Bestiary 2 set it's probably too late for that, but no harm in trying to guess!
Because of that I decided to give it a number neutral name as sort of a catch all for the inevitable 4-120th Bestiaries.

Please, please, please can we have numerical dimensions on more creatures ? Weight not so much, but when size categories cover roughly a doubling in length/height and an eight-fold range of weight, specifics would really help, particularly for entries that did not have them. (I'm looking at the B5 entry for polar bears, where neither the regular nor the dire polar bears have lengths or heights and they're listed as the same size category. Though I suspect the most useful one for me to have long term would be dimensions for dragons at different age categories.)

Ya know, now after 3 hours I've managed to think of several specific creatures(and creature types besides qlippoths and sahkils and other fiends :D) I want to return in 2e, so might as well list them here in case a merciful writer reads the post and takes notes :3
Siktempora from Runeplague: So cool new type of outsiders we get single example of(Misery) and I love the Misery Siktempora so much I don't mind if its only one we get to 2e for long time :'D

Most of devils from Council of Thieves, but Cabal Devil (Uniila) in particular: Cabal Devils were cool and appeared in multiple adventures, but they were always harmed by not being in one of bestiaries so their statblock had to be printed in full everytime :'D
Azi from The Final Wish: Okay, I know these are likely coming back because they got mentioned in 2e bestiary, but still felt mentioning I want them to come back :D
Clacking Skull Swarm from the Last Watch:...What can I say? Its fun swarm :D
Cyphergull from Secrets of Roderick's Cove: What, this list isn't just full of horrible monsters(I really should have mentioned earlier I want stuff like agathions to return as well :P), I also want cute and funny familiars :D I can't really list all of them, but there are quite lot of them I want to come back
Galluvix from Songbird, Scion, Saboteur:..Oh come one I know I just said that I can't list ALL of them, but I had to point this one as its one of my favourites too :'D
Kasthezvi from Runeplague too: Yeah, I love these too. They are creepy silence monsters that float and know forbidden words :D(I also like ashullian from the Runeplague, but listing three monsters from same AP part might be bit too much for single list...)
Mortics from Tyrant's Grasp bestiaries: Yeah this is third group in this list I want to see return in 2e.
Alghollthu variations from Ruins of Azlant: Ruins of Azlant bestiaries actually have some of my favourite creatures, but I decided to focus on this family of creatures in particular in this list.
Beings of Ib from Dreams of the Yellow King: ...Okay, I admit this one is on this list as a joke, because I find idea of long extinct species having ancestry stats funny. Its not correct for this list anyway as this is bestiary list. But yeah, I wanted a spot to say that Strange Aeons bestiary had lots of cool monsters and in general I have hard time picking which lovecraftian creature I want particularly to return in 2e, and not just ones from strange aeons, there are lots of cool ones...
Neshmaal from Pyramid of Sky Pharaoh: So found out about this one while checking archive of nethys for dominion of the black monsters :D I got really good use out of it in IG so yeah I want it to return
Yah-Thelgaad from Valley of Brain Collectors: I choose this spot to represent my desire for more Dominion of the Black monsters :D Yay!
Avatarana from Occult Bestiary: Its one of really fun and freaky rakshasa to use :D
...And at this point I take break from writing the list x-x; But yeah on further thought I can actually think lots of ones I want to see to return. Maybe I'll wait until bestiary 2 is out before I write sequel to this list...

Makes me tempted to start the second list, but I'll try to resist and wait for Bestiary 2. Or at least until I remember more obscure monsters I liked (because seriously, lots of monsters in pathfinder, hard to remember)
Also still wondering if I want mythic monsters to come back before mythic rules are out or not :D

I think I might at this rate really wait until bestiary 2 but that might be bit late waiting time...
Anyway, on overall, I want mythic subtype creatures to come back, but I don't know if I really want them to come back before mythic rules exist for 2e

Remembering more I want back: Blights should come back, intelligent super oozes that affect enviroments are cool story potential
Given that blights get specifically called out in the "Other Oozes" sidebar in the bestiary I think this is pretty likely.
Strangely, that same sidebar calls out shoggoths as also being oozes, even though shoggoths lack the ooze trait.

Hmmmmmm oh yeah, I want Daughter of Urgathoa back too.
...Yeah, I think I'll just wait until bestiary 2 is out, because some of these are likely to come back in AP bestiaries as well
I love the aesthetic of daughters of urgathoa, though I suspect they are something for a lost omens or adventure path book.

I'm hoping that book has return of heralds and servitors too, so might not be perfect place for Daughter of Urgathoa too unless every deity also gets creature directly related to them

The inner sea gods book in 1e had like 6-7 pages of fluff for each major God (including urgathoa) and at the end had a bestiary with a Herald and a servitor for each of those gods, so it is definitely possible to have every major deity get a creature.
