Hello,
I am a Cavalier who's mount has died. After a week of mourning, I found one rode by a non-common speaking creature. Does the horse need to speak my language for me to take this horse as mine to ride in battle? Or, do I have to take a point in Linguistics and learn the horse's trained language for me to operate it?

I don't know sh*t about f*ck about riding horses but I think in game its just covered with handle animal check to get the horse to like you. Maybe an increase in Ride check DCs until you and the horse get used to each other but I don't know how much of horse riding is talking to the horse vs... whatever it is people do with the reins and spurs or whatever (see my previous profanity regarding my proficiency in horses).
For simplicity sake, I'd just go with Handle Animal to get the horse to follow you and not modify the Ride checks at all.

You shouldn't have to take linguistics to communicate with your horse. Animal Handling should cover that, but Ride is the only applicable skill.
Now in the off-chance that your horse was claimed from hobgoblins that trained it for combat, then it would not be unreasonable to say the horse responds to commands in goblin.

Reminds me of the joke...
A Pastor was walking past a pet shop one day when he noticed a sign in the window: "Christian Horse for Sale."
Being that the Pastor owned a large ranch, he was immediately interested, and went into the shop. The owner took the Pastor out to the back, where he saw a beautiful Arabian stallion. He agreed to allow the Pastor to take a "test run." The Pastor grabbed the reins. "giddyap." The horse ignored him. "no, no," counseled the owner. This is a Christian horse. If you want him to move, you must say, "Praise the Lord!" The Pastor did as he was told, and the horse started off on a leisurely walk. However, he soon found that the horse would not stop. "He won't answer to 'Whoa', said the owner. It's "Amen." The Pastor decided that he liked the horse, so he bought him and took him home to his ranch in the country. He saddled the horse up again, said, "Praise the Lord," and went riding into the countryside. Suddenly, the horse saw a rattlesnake crossing the path. Frightened, he reared and bolted straight for a cliff. The Pastor cried "whoa!" but the horse only ran faster. In vain, he tried one word after another. Finally, he remembered the correct command and screamed "AMEN!!!!!" just as the horse approached the edge of the cliff. The Pastor was so thrilled that his life had been saved that he raised his hands to the sky and shouted, "PRAISE THE LORD!"

idk about horses, but real life dogs for example don't really respond to the word they hear but the tone and the pitch it is used at. a dog that obey to 'stop' would also obey to 'Omp' or even 'O-uo' if used in the same tone and manner as when using 'stop' (it might also NOT respond to 'stop' being used by someone else with a really different tune and manner ;)
as in pathfinder animals by definition do not have a language. im pretty sure if you pass the handle animal check your fine.
