When searching for advice on a DEX based monk, I keep seeing mention of an Agile Amulet of Mighty Fist. I found the Agile quality in the Pathfinder Society Field Guide, is that the only place to find it?
Also, how does it calculate the bonus? Does an Agile Amulet of Mighty Fist +1 with an 18 DEX add +5 to attack and damage rolls?

I can't speak to what sources have Agile, but I would assume that is it.
As for your example, a +1 agile amulet of might fists would grant a +1 enchancement bonus to hit, a +1 enchancement bonus to damage, and a +4 untyped bonus to damage from you Dex mod. You would also have a +4 to hit assuming you had weapon finesse, but that is not provided by the agile enchantment.

Agile is Pathfinder legal. It's Guided that is "sort of" legal - It's from 3.5, but I don't think there is anything preventing it from carrying over in Pathfinder aside from GM Law.
It takes whatever your total Dex mod is, and turns it into the damage with your Light Weapon; Natural Attack or IUS in this case.
So if your BAB is 8, and your Dex mod is 4, assuming you have Weapon Finesse and a Light Weapon, your total attack modifier would be +12. Your associated static damage with that weapon would be +4 - From the Agile enchant.
Also, you don't have to have any enhancement value on the AoMF if you don't want to. You can just have an Agile AoMF if you choose.
I still wish the AoMF went to a +10 total enhancement/enchantment value like other weapons do :(
