I know it is early for this discusion and I also know that there is no official word wether there will be such a product but I have to give my 2cents on the matter out now. First thing, I still want all the monsters from the bonus beastairy in this one, wich was stated that they would be, but that was a while back. Now for some of things that come to mind that I would love to see.
More fey(atomie,sprite,sea sprite come to mind)
More types of Lamia
more types of rakshasa
more dragons(linnorms and asian dragons would be nice)
asian style monsters(nekomata,kitsune,kappa,ki-rin,oni,azuras,apsaras,etc.)
more golems(mud,bone,doll)
more lyconthropes(bat,raven,fox)
more giants(mountain,jungle,desert,sea,fog,forest)

I would like to see all creatures in the first four adventure paths that have not yet been incorporated into either the first or second book. I know for sure there are a few from Legacy of Fire that are not "official" yet. While it is easy to convert and you can find fan based conversions out there I still like have the hard cover book with pictures and descriptions available in a familiar format.

And paizo, I implore you, PLEASE don't give us anthropomorphic cats!
If we see a psionics tome anytime soon, though, I always welcome the return of gem dragons, and I do like the direction of most of the OPs other suggestion. Variants on certain types of monsters would be interesting. I'd definitely like so see a few more linnorms in the mix!
Also, I'll say it now. I looooove templates - they can be used to create entirely new monsters. If it isn't out in the Bestiary 2 (I haven't gotten a look at it yet), I've been dying to see a death knight template.
Also, I'm entirely in favor of not statting the gods, but is there a chance we'll see stat blocks for a few avatars?

How would you feel about a humanoid template? Something to help a ref stat up anthropomorphic anything they feel like...cats, foxes, jackals, leeches, wasps....

I believe we got that in savage species, along with a picture of a donkey-man that haunts my dreams to this very day.

New templates, like one that is feybased/first world for animals, a half-fey or Feytouched race, elemental themed templates for animals that are like the celestial or fiendish templates. Kercpas, I remember these little guys from 2nd edition. If we can have humaniod lizards, snakes, frogs, fish, hyenas, apes, birds, and monkeys then we can have humaniod cats, wolves, mice, foxes,etc.

More plant creatures(I remember this plant creature in 2nd ed that had buzz saw like leaves and it looked like a regular bush.)
more elementals(life, time, positive energy, negative energy)
extra planar creatures that feed off of or represent an emotion
Monsters that are good healers or than can channel positive energy without having class levels or natural caster ability.(more than likely from the positive energy plane)

As I am want to do I've been listening to the Star Wars Fate of the Jedi books, and I'd be totally down for more killer plants.
I'm guessing you can use Wookieepedia to look key points. A creature called Abeloth (she is a bit tentically) turned her world into a plant based nightmare. Just about every single plant was carnivorous and aggressive. Lots of poison, stabbing, and strangling things. You also have various animated movies based on catastrophe where plants run crazy out of control. Nausicaä of the Valley of the Wind, Origin: Spirits of the Past, and many others.
As a though exercise what would it take to a fantastical moving jungle that migrates?

If we could get monsters from movies,books, tv shows(minus those pesky copyright laws) then lets have Audry II from "Little shop of horrors", xenomorphs from "Alien", preditor, movie version gremlins, and some monters from Buffy tv series. But thats not going to happen but there are still some stuff out there that is public domain.

This is another chance for Awakened creatures.
Any naturalist that has tracked foxes, anyone who has worked with dolphins, or anyone who is owned by a cat knows they are not Int. 2 or less. It would be nice to have a Raw category. You could also put some plants(in addition to Treants) and insect swarms into this category.

If I had to pick something to ask for in future Bestiary books it would be for something new. It's easy enough to convert monsters from previous versions or even from other games. Another book reprinting existing monsters, modified to account for rules changes, isn't nearly as exciting to me as new and different monsters would be. Bonus points for pronouncable monster names, extensive backgrounds, one-page-per-monster entries, and separate artwork for each monster.

My cat cannot work lever faucets, despite having the strength and desire to do so; does not understand that I don't control the weather; has not, in 13 years, figured out that cars can't chase her onto the sidewalk; is utterly incapable of speaking a single word of any human language, and the number she understands can be counted on one hand; and licks plastic bags as a hobby.
By what standard are you giving her human intelligence?

I'd throw my support behind a template-only book, as opposed to a raft of updated creatures from earlier publications. I'd even prefer it to new monsters. In a way, a template book gives B1 and B2 the potential to become whole new monster books, with just a bit of work from the GM. That is a more exciting prospect than another book of static monsters.
That said, a .pdf-only of updated monsters could probably do very well; I would certainly pick it up for my Rise of the Runelords campaign.

I hope that Bestiary III is a long way off. That being said, my wish for its content would be that the developers spend less time updating old material and more time coming up with new creatures. As someone who owns both of the Tomes of Horror, some of the updated creatures were not as interesting to me as they might have been for others that they were new to. I had actually already updated a few of them to PF on my own. I am also not a huge fan of seeing creatures that have been published in APs being re-published.

I'd like more aberrations/Lovecraftian monstrosities: Mi-Go, eye of the deep, gorbel, the great race of Yith, etc.
Secondly, I'd like to see more of the Tome of Horrors dragons converted: fire and ice drakes (or dragonets, as the original Fiend Folio referred to the firedrake), salt drake, dragonnel, elemental dragons (which are classified as elementals, so maybe they could be draconic petitioners or some attempt by Great Wyrm dragons at becoming immortal).
More prehistoric beasts, such as the mesonyx (a predatory ungulate), brontotherium, and basilosaurus.
More regular animals and vermin for familiars and animal companions (raccoons, skunks, familiar sized insects, etc.)
More demons, daemons, and devils (such as the not-yet-updated contract devil) as well as new kytons, proteans, agathions, azatas, and aeons.
The rest of the Rise of the Runelords bestiary that wasn't updated: goblin snake, giant gecko, Sandpoint Devil, carrionstorm, smoke haunt, skull ripper, argorth, Mother of Oblivion, deathweb, scanderig, runeslave, ercinee, (star monarch), (yaenit), crag spider, kuchrima, harridan, and hungerer.
The rest of the Crimson Throne bestiary that wasn't updated: dream spider, raktavarna, nosferatu, beatific one, rakshasa maharajah, sikari macaque swarm, bonestorm, cinder wolf, havero, red reaver, chained spirit, danse macabre, akaruzug, phistophilus (contract devil), and mobogo.
(Note: I would leave the stats for the heralds of the Gods to a new, expanded, and hopefully hardcover version of Gods and Magic. This would also include setting specific creatures like the Daughters of Urgathoa.)
Edit: And a tiefling equivalent for the gnolls. Something between the gnoll and the yaenit that has no wings (like the half-fiend template gives) and is different from the fiendish template.

I'd like to see a 3rd type of basic undead other than just Skeletons and Zombies, it seems like there's not enough low level undead to fill a proper crypt, even with modifications. Hell, maybe you make them inflated gas bags that levitate and have Dr5/ Peircing.... giving them the ranged support role.
More new monsters, Please, I'm a monster book addict, and I've blown a lot of cash during my time browsing through books only to find a lot of monsters that are just mishmashes of old abilities. I want new creatures, new foes that dont just follow the same old patterns
it seems like in most monsterbooks ( thank goodness the bestiary 2 wasn't like this) just copy/paste one creature type onto another.

elemental + outsider
elemental + undead
elemental + elemental
elemental + humanoid
dragon + outsider
dragon + undead
etc.....
Give me new, awesome stuff, not modernizations of creatures i've been seeing in literature for my entire life, not stat upgrades of some creature that was thrown into 1st or 2nd edition just to throw off the players for one encounter, never to be seen again.
the witchfire was great, a logical play on fantasy tropes that hadn't been attempted before. the players get the local hag burned at the stake and get a more powerful foe in return.
the Totenmaske is what undead should be... terrifying and strange, rather then just " oh, here's another undead that froze to death and has ICE powers, isnt that unique?"
the shantack flies through space.... SPACE: just reading that creature's entry made me reconsider my whole Prime material plane..... " do I have nearby planets that players would enjoy visiting? how many? what lives there? " i want more monsters that make me think about how my game world is structured.
anyway, that's my rant done, i'd like to hear what others would want.

Thats the one, although in D&D terms he would definately be a devil, that dude was a slick lawful evil. Buffy is a proverbial goldmine for monster ideas, although ironically several of their monsters were inspired and reverse engineered from D&D, ahhh the circle of monster life at work.

Yeah Buffy is a goldmine of a series for monsters. Lovecraftian monsters are great as well. Love monsters from myth I mean they now have Scylla and Charibdus stated out, how awesome is that. Now how about Fenrir, Cerebus, Ladon, Argus,etc. I would love to see the Greater medusa make a come back. I do agree about having more cryptics like Ogo pogo, Lockness monster, Bigfoot,etc. Monsters from other planets as aposed to another plane of existance.
