Yeah - I thought I was gonna have internet over the holiday, but the place I stayed had super-unreliable 'net. I could get online half the time but I certainly couldn't load anything data intensive like Google drive, Roll20 maps, or any file downloads.

Here, but still part-time. Passed a teeny little grain last night and the urologist said, "Yay! That's it!"...but I'm suspicious. The stone I passed was tiny and there was pretty much no pain involved, and the pain in my side hasn't subsided much, so I'm drinking lemonade and lots of water for one more day on Tuesday and hope to get back to (almost) everyday posting on Wednesday.

As for what to do next, much as I love to chew on some good RP, I don't think I'm alone in wanting to check the Moathouse off the to-do list once and for all.

I don't really have much to do in town, so I'm up to finishing off the moathouse.

You turn over the bandit leader for judgment. Rufus takes him to be judged by the town council, to await his fate.
I'll presume, unless specified otherwise, that you sneak in a rest period while back in town, since you had to go back and forth while carting stuff and that would take up the whole afternoon.
After spending the afternoon hauling goods back to town, you take the opportunity to rest up before returning in the morning.
The moathouse is still squat and forbidding, still surrounded by marsh, with no signs of inhabitants. Nobody has replaced the bandits that you drove out.
A quick search of the first floor shows that it only holds a few small animals; nothing dangerous has moved back in... yet.
You head down the stairs and into the ogre's room once more...
What next?

Is making the map anything we need to make any sort of skill check for? Or is whoever volunteers assumed to just be doing it as we go along?

You can make a crude but serviceable map without a skill check. It will not necessarily be completely to scale or filled with beautiful straight lines, but it will at least show the relative positions of various rooms. Making something more elaborate than that (or if you had to map extradimensional spaces, shifting levels, etc.) would involve use of an appropriate background skill.
Note that whomever is mapping has their hands full while you are exploring.

Bat would've put in a good word for the bandit, saying that he'd led the group to a treasure stash and acted in good faith while at the moathouse and on the return trip. She'd recommend leniency insofar as that's possible.

We seem to be handling everything ok for now so I think we should hold off on bringing the men-at-arms. What does everyone else think?
Also, regarding order, I can go first or second after Zinnath so he can search for traps.

Agreed. Let's save those extra swordarms for when we're into a bit thicker trouble. Also, the moathouse isn't particularly large and that'd be another four bodies cluttering up the room to maneuver.

Sorry, sorry. Been on vacation, which actually gives me -less- free time to post. I wouldn't posted sooner but a sick toddler had other ideas. The good news is that if one has recently ingested a half cup of hot cocoa, the vomit actually smells kinda nice. =)

Just to piggyback on DM's idea, Alchemist fire, while extremely cool, isn't a fireball. Indeed, it kinda just attacks one target, with adjacent creatures taking 1 hp.
Hence, we might be better off just staying where we are and putting Deko and Fezzik here, in front of our doorway, with Enoby and Bats on the flanks. Scary Dragon(tm) can go and provoke them into attacking, and then we, like the 300 Spartans of fame, will be able to take them without getting surrounded.
...
Wait, I've just been handed a note.
Okay, well, -unlike- the Spartans, we'll have victory.
And less sex. ^_^
