Anything or combination of things that weighs up to 10 lbs and fits inside 1/5 cubic ft of space. For the Universalist Wizard I played, it was preserved "snacks" for her owl familiar (she had a separate Spell Component pouch) and a second belt pouch for an Acid flask; for my halfling Warpriest (Divine Commander) he had 2 belt pouches, one with Cold Iron sling bullets and another with Silvered sling bullets.
I'd suspect anything about 2 1/2" long could or smaller could fit in a belt pouch as well. This precludes most weapons but collections of coins, sling bullets, a precious ring and so on would all fit. I usually specify a belt pouch is where NPCs/foes defeated by PCs are carrying small amounts of treasure such as gems, coins or unworn jewelry.

Usually have one for money, a separate one for spell components, and maybe one more for small trinkets/collectibles. Anything else is neatly stowed away in either a masterwork backpack, or a handy haversack if I can get one. Current character collects and mints rare and unique coins. I keep those separate from my generic funds.

Basically all the small stuff you would need for daily life. Since a lot of clothes from the medieval times did not have pockets they used pouches. This is even truer for people wearing armor. This would include money, but also a lot of personal items. Due to the lower technology level characters are going to need stuff that modern people do not. Since I don’t smoke there is no reason for me to light a fire. But a character in a game probably will. Think of what women carry in their purses and that will give you a start.

Purses either wind up horribly cluttered or tend to have modern things in it. Keys (not for an adventurer), tampons (Don't think they are in Golarion), makeup (maybe), aspirins and other portable medicine (only for an alchemist although potions might count), pen and paper (this can go in), money (this would go in).

Do purses with modern things not get cluttered?
tampons (Don't think they are in Golarion)
I don't know about tampons in particular but some form absorbent material to soak up menstrual blood++ is pretty much a given for almost any time period.
Keys (not for an adventurer),
Why not?
aspirins and other portable medicine (only for an alchemist although potions might count)
Why only alchemists? If you have a small amount of some powder, unguent or liquid in a container, why can't it go in a pouch for anyone?

@Bjorn In order
1) Generally if you pare a purse down to essentials its usually only modern things that get in there. Its when you start adding generic things like a scarf, receipts, umbrella and so on that it starts to get cluttered. Absorbent materials yes but in a mideval period I imagine they're more likely to go into a backpack rather than a pouch due to size. If your wandering around like most adventurers are I can't see you needing keys on a regular basis. They could but that example was specifically small modern medicines. Except for alchemists with the right discovery they tend to be a lot larger in pathfinder.

Alchemical remedies do exist in the game. In fact they sometimes are equal or even better than modern medicine. No reason that an alchemist could not come up with a super absorbent material and have something similar to a tampon.
Thing like Pens exist even if they are not the modern ball point pens we use. Combs and other grooming tools would be something many people carry. Don’t forget something to cover smells. Considering how bad smells got in medieval times people often carried around something they could smell to help cover the stench. Spices were also very expensive in medieval times so someone with wealth would probably carry around some to season their food.
