This is an excellent query... I know my group has had some issues arrise between starships not being valid now and pricing for grenades. But it's difficult to keep track of the changes since there's still no errata up.
Certainly this is an unusual circumstance but it has still been a surprisingly long time since the update was made and now.

It looks like the PDF of the Starfinder Core Rulebook has been updated. Have the changes in this PDF already been posted in the FAQ/Errata, or is there some other place we can find a list of the changes from the original version?
I'm really wondering what kind of convoluted approval process exists here that "as soon as we are able" is over a month and a half. =/

The same process that is used to check the file sizes of released PDFs and the one used for creating sub-forums for newly created adventure paths.
Corona apparently did cripple Paizo a lot for some reason.

Errata update today, covering the 1st and 2nd printing of the Starfinder Core Rulebook.
(All errata listed for those printings is incorporated in the Pocket Edition and the third printing of the Starfinder Core Rulebook.)

Is it me or does the errata document cut off after page 335? Cuz there are still more changes down in the rest of the book.
No, it goes up to page 508. However, the site loves showing that it has tabs. If you open the faq in a small window (I'm using Chrome), it goes up to page 232 (and cutting off the sentence. The larger you make the window, the more errata you get to see.
If I use my phone, the mobile version ends past the grenade cost changes (page 183, I'm using android).
I had noticed something like this before, because on my phone I cannot open all the tabs (faqs and errata) and have them show me everything. It is like there is a maximum size or something.

Is that all of it? I could have sworn i saw something about movement and moving during a full action ala a charge or operatives trick attack elsewhere.
That's in there, though maybe you're having the problem that other describe of the text cutting off.
Page 247: Add the following text after the last sentence of Move Your Speed.
Some full actions (such as the operative’s trick attack) allow you to move as well, which act as moving up to your speed.
