I suggest you check out Purple Duck Games' Monster Update Subscription. For $5, you get to pick 5 OGL monsters for PFRPG conversion. When it is released, you get all the monsters that they have converted (up to 250, depending on how many sponsors it gets). I picked five from the Epic Level Handboook - Lavawight, Winterwight, Shape of Fire, Shadow of Void, and Umbral Blot.

Dont give up hope yet man! Maybe we can get a Spellknitter, or Spelltailor or something! :)

I would like to see full descriptions of all the variants. Current example - Yellow Mold Zombie. To use it I have to go through all the Undead traits and replace them with Plant traits. I find this a lot of work, on the whole.
I know it's not possible to do it for every case, and in many cases they DO publish examples, but I would like to see more. Mainly because it's a lot of work to do it myself!

What's IP stand for? And how can you tell if its copyrighted to WOTC or not?
Intellectual Property. The monsters in the d20 SRD are free to use. Anything else in a WotC publication from 3e is WotC IP.

Mind flayers would be nice... eventually.
The thing is, I'd definitely want them done as a psionic race, meaning they need to do Pathfinder psionics first. Or do them at the same time as psionics.
I know this probably won't happen, but it would rock nonetheless: Paizo releases their version of psionics, and, as a tie-in, either a book about Vudra or a planetary guide for Castrovel.
And when they do, they give us a psionic race of creatures that resemble Great Cthulhu, i.e. vaguely humanoids with squid faces, that have strong psionic abilities. They could be natives of Castrovel.

That's not quite true. Some of the monsters from Fiend Folio and later books were also included in the Tome of Horrors by Necromancer Games and are thus open content.
I'd like the to see an update on the Frost Folk/Man.
@KaeYoss:
While not the original mind flayer, Dreamscarred Press did an update on the 'Phrenic Scourge':
Psionic Monsters Beta

To avoid copywright issues, give them wings and name them either "Star Spawn" or "Xothians". But I'd have them come from the Dark Tapestry. But lose the brain-extracting thing...that's the Mi-Go's gig.

Just a note: The Eldritch Spawn Creature Template from Book of Monster Templates can be used to make creatures similar to the various Illithid breeds.

That's not entirely true. Dark Creepers/Stalkers, Orcus and several others are open content thanks to Tome of Horrors.

I've bought into that too, have you heard back from them? I contacted them with my list of monsters (7, because I preordered before the end date) and I haven't heard back from them and, last I checked, they haven't updated their list.

I recieved an update on Sunday, with a draft of five monsters.

Devilbonded template.
Various elemental, entropy, psuedonatural, outsider based templates.
And, while we're at it, anything else that hasn't been plundered from the H.P Lovecraft vault, H.R. Geiger invention, and things of horror from various horror writers (Clive Barker, for example).
If it's strictly from various d20 texts, some of the material from D20 Modern and its Menace Manual, Call of Cthulhu d20, and maybe some of the Farscape d20.
C'mon, Luxans. You know you want to see 'em.

Candarian Demon (a la The Evil Dead)
Mythos Creatures: Byakhee, Chthonians, Colours Out of Space, Dark Young of Shub-Niggurath, Deep Ones, Dholes, Dimensional Shamblers, Elder Things, Flying Polyps, Great Race of Yith, Insects from Shaggai, Mi-Go, Moon-Beasts, Nightgaunts, & Star Spawn of Cthulhu
Every monster from the SRD that hasn't been included in the Bestiary, Bonus Bestiary, or Bestiary 2. (With the exception of those that might require an epic rules set, but as soon as you work that out, I'd love to see them, too.) I especially want to see: Abominations, Lavawight, Paragon Template, Pseudonatural Template, Shadow of the Void, Shape of Fire, & Umbral Blot
Monsters from the APs, modules, and Campaign Setting books that haven't been included in the Bestiaries.
Flux Slime Hazard (Maybe not in a bestiary, but in some future RPG book, like the epic rules)

+1
One of the entries in the Bestiary 2 (the Shantak) specifically mentions that it has a fear of Nightgaunts. If this means something about them has already been published or if it will be published in the future I am unsure.

The HERESY DEVIL and
The APOSTACY DEVIL
.... from an earlier AP, are glaring omissions in the Bestiary 2, I feel. I would rather have had them reprinted (w/ PRPG) than the newer CR19 DumbAss Devil that the Bestiary 2 introduced.
The FORMORIAN GIANT
....even though Paizo would have to do a "monster redesign" and change the spelling so that it's closer to the actual myth creature.
An Orcish Subrace or two (or three)
....because we don't quite have enough basic monster/ mooks and while Goblinoids have 3, Orcs could (should) also have three, yes? Urikai(sp?) are Open Content, afterall, and we know them as Orcish....
The FORMIAN
....but with an illustration more like the 2E Monstrous Compendium and less like the pitiful, squishy looking thang in more recent products.

I hear 'Hasbro' and 'Intellectual' in the same thread, then I spend the next minute fighting the urge to laugh.
Wait, what was I saying again? Oh right, Monsters we Miss!
Astral Stalkers (MM III) Good 'Predator' themed Monster to throw at cocky PCs.
Changelings (MM III) a great race to be able to offer the PCs and a great race to challenge them with.
Dracotaur (MM III) Excellent race to challenge PCs with in Swampy Terrain, great 'servitor' race for temperate marshes and/or regions bordering such terrains.
Death, Eldritch and Sand Giants (MM III, again!) great additions to the Giant lineup!
FLINDS!
Blackscale and Poison-Dusk Lizardfolk!
Shifters!
Spellwarped Creatures!
Every G$@*&%ned Troll Breed
Dalmosh (MM IV) Great challenger for the Tarrasque in a pinch, so long as the Summoner can direct the Outsider in the right direction and then teleport the hell out of dodge.
Singh the Immense *high-fives the Fat Guy!*
Elemental Mages (Stronger Ogre Mages) loved those guys!
Frostwind Virago. Loved throwing a Kingdom of Frost-Giants led by a 'snow woman' at PCs.
Spawn of Tiamat. Dear God I miss these guys.
Mindflayers, Vanilla and Thoon.
Siege Beetles! More Kaiju Goodness!
Vivisector. God that thing was creepy as all hell!

Can't really say I "miss" any WotC monsters, since I can either run them virtually as is or convert them with minimal trouble, so they're still perfectly viable to be used in my games.
What I want to see: Archfiends, Empyrial lords, <other outsider lords>, and stats for Geb and Nex.
I suspect all of those will have to wait until the Epic rules are finalized though :)
