@dice gods - I saw the Sansetsukon on the Eastern weapons page. Seems too good to be true Not sure those are OK in your setting. Happy to choose something from the standard list instead.
Think I have the character set up right, open to feeedback.
Also let me know if I should write a backstory.
@Sanrael - if you go half-orc we can be the uglier, more brutish version of Legolas and Gimli.

Cool. My thinking is that it has higher damage than even my fists for a long while.
The only thing I was worried about was Stunning Fist (and I guess the Ki Strike to overcome DR later). But I think the Unarmed Strike section has me covered.
A monk’s attacks can be with fists, elbows, knees, and feet. This means that a monk can make unarmed strikes with his hands full.
Again, please feel free to school me. Never played a monk before.

You may want to think about some alternate racial traits from the dwarf subtype that may give you more bang for your buck.
Unstoppable: Some dwarves train from a young age to outlast orcs on the battlefield. They gain Toughness as a bonus feat and a +1 racial bonus on Fortitude saves. This racial trait replaces hardy.
Iron Within: Dwarves with this racial trait gain 1 ki point. If the dwarf gains ki points from a different source, this ki point is added to that pool. In addition to any other ways in which the dwarf can use ki, the dwarf can expend the ki point as a swift action to either gain a +2 dodge bonus to AC for 1 round or increase her base speed by 20 feet for 1 round. The bonus ki point does not allow the dwarf to make a ki strike unless she has another ability that allows her to do so, such as the ki pool from the monk class. Like other ki points, this ki point is replenished each morning after 8 hours of rest or meditation. This replaces defensive training and hatred.
Both seem like no-brainers for your Monk build?

Uh . . . yeah! Thanks for taking the time to look through that list. I always forget to look at alternate racial traits. I guess I'm much more used to vanilla Pathfinder.
Also wanted to say you have an interesting stat block Callon. Looking froward to seeing how you play it.
@dice gods: Can I take both of those traits?
I guess a better question is: Will I regret this when we fight giants and orcs in every single battle?

You want the 16, 14, 14, 12, 10, 8 stat block as follows:
14 STR
12 DEX
14 CON
18 WIS (+2 from human)
10 INT
8 CHA
Traits: Fate's favored (you should be casting LV1 divine favor a lot and it gives you +1 to hit/damage w/luck bonus) and one other of your chosing.
Feats: Weapon focus (free) great sword; Power Attack; Toughness or Furious Focus.
Blessings: Good & Liberation are very solid.
Spells: Divine favor and shield of faith at lv1. You can burn both to cast heals.
When you get fervor at lv2 you can use the to cast spells as quickened and get 2 actions a round.

Thinking about this some more, if you make Carbour as a 1/2 orc and take sacred tatoo, that combined with fate's favored trait would give you +2 to every save.
Sacred Tattoo: Many half-orcs decorate themselves with tattoos, piercings, and ritual scarification, which they consider sacred markings. Half-orcs with this racial trait gain a +1 luck bonus on all saving throws. This racial trait replaces orc ferocity.
Could also take:
Dragon Sight (2 RP): Half-orcs with this trait gain some of the keen senses of dragonkind. They have darkvision with a range of 120 feet. This replaces darkvision and intimidating.

Glory of Old seems good, I wasn't too keen on taking Seeker again, since Perception is already a class skill.
On the other hand, Steel Soul requires Hardy. So it conflicts with Unstoppable. Not sure if the HP from toughness is more important or the saves.

Glory of old is definitely the way to go. +1 trait bonus on saving throws against spells, spell-like abilities, and poison? Yes please!
Stick with unstoppable, you get the HP which you will need as frontline with butt AC and +1 to FORT which has a broader range than vs. just spells and you have Glory of old in your pocket. Plus Monk has great saves anyways, plus a bunch of abilities as you level that make you immune/resistant to a lot of stuff.
