Multiple grapplers involved in a grapple is an edge case. I'm inclined to say it's a single action but you have to make a separate roll for each opponent.
Emergency force sphere would include both of you if it was just the salamander. Since the giant has you grappled and he wouldn't fit inside the sphere the spell would just fail.
