What is the best/most friendly AP for Medium/Large mounted characters?
AKA What one has the fewest small dungeons?
What has the most open field dungeons?
I’ve not played it, but I believe Ironfang Invasion was written with mounted characters in mind, and there is something to that effect in the players’ guide.
I haven't played it but would Kingmaker be a good AP for this? Given it's wilderness setting and all.

Depends. You could probably make it work, but there is a lot of heavy forests and thick underbrush and swamps and rivers and caves... it does have some open grassland, though. So there is that.
