This is why the term Venerate is in the glossary of the Guild Guide.
Venerate: Venerate refers to the relationship between
a PC and a specific deity, pantheon, or philosophy of
some sort where the PC follows the cause but gains
no specific mechanical reward as a result of doing so.
Player characters are able to venerate any Golarion-specific
deity, pantheon, or philosophy they wish without
alignment concern.
My Arcanist venerates Nyarlathotep which means it's all roleplay (he hands out pamphlets promising what you could learn by letting Nyarlathotep into you heart, these pamphlets are drawn with crayon) and he gains no mechanical benefit from this.

For the same reason Organised Play bars evil PCs. Elder cultists are canonically insane and some players don't have the maturity to be given that latitude.
But that argument falls flat when you take into consideration that I can have a guy worship ANY demon or devil Lord. I can worship Kostchiechie, and follow an extreme misogynist, I can follow Norgorber, who basically amounts to being god of serial killers. The only evil that is banned is evil characters, and the Outer Gods.

I think it may be a matter of obscurity, rather than depth of evil. The major demon lords, archdevils, and Horsemen are legal (and worship of the Horsemen is at least as insane as that of the Outer Gods). But none of the lesser evils - nascent demon lords, malebranche, daemon harbingers, Queens of the Night, rakshasa immortals, and so on - are legal. Even a few particularly obscure nonevil deities, such as Erecura and Easivra, are banned. This suggests that power and primacy might play their parts.
(It doesn't quite fit with the more libertine legalization of nonevil deities, such as empyreal lords and the deities from Distant Shores, but Leadership may have been more permissive there thanks to their more benign status. The same goes for the Azlanti pantheon; at least the Scarab Sages provided a convenient explanation for the Society's familiarity with the Ancient Osiriani pantheon.)
With all this said... the Strange Aeons Chronicle sheets are on the horizon. And who knows? Maybe the poor fools who tread that Path on the Society's behalf will bring back some of that forbidden lore. ^_^

Re: Venerate. Currently I’m planning levels of Evangelist, so venerating isn’t an option. Evangelist isn’t an option for the Great Old One’s either, but I feel like there was something that needed actual mechanical benefit. Don’t remember if it was a trait or potential dip into Warpriest or Inquisitor. Something like that.
Thanks to Strange Aeons, the Great Old Ones are in Golarion lore with specific locations defined where they are worshipped. That may not have been the case when they were originally published.

I think you need to flip a few assumptions on their head. It's not "the Old Ones were singled out", but rather "some others were accidentally let in".
Take a look at the tables with deities in Inner Sea World Guide, pages 228 to 334. All these deities are legal. Then take a look at Inner Sea Gods - all categories that had legal members in ISWG are also legal in ISG. So because there's a legal demon lord in ISWG any new demon lords in ISG are also legal, even though that's a longer list. But the Nascent Demon Lords, Infernal Dukes, Malebranche, Whore Queens and Outer Gods categories are all not in ISWG and didn't get made legal in ISG.
Considering that the followers of several demon lords have been firmly in the Enemy category for PFS (Sifkesh, Angazhan, Shax, Baphomet) it's quite a miracle they're legal. Same goes for out and out unreasonable deities like Rovagug.
