So my DM doesnt see anythign wrong with me taking:
Eldritch Heritage - Sylvan
So if I then make my character thus:
1st level Cavalier
3 Levels Wizard
(Going towards Eldritch Knight)
I then would have a Animal Companion from Sylven Heritage and another animal companion from Cavalier?
Could I take Boon Companion TWICE to make them both my level?

you've already moved into house rule territory, ask your GM.
I understand that.
Boon Companion does say you can take it multiple times for more then one animal companion or familiar.
My question is, with the ruling as it is written how do I get multiple animal companions if there all "As per Druid" rules?

It allows for it. You can take it more than once. Can't apply twice to one animal though.

Given your houserules, you'd have two options that would remain within the spirit of the rules:
You could combine the levels of both Animal Companions, assuming they're on the same list (see the FAQs on combining Animal Companions from multiple classes). Horse and Camel, for example. You'd have one level from Cavalier and (character level minus 2) for Eldritch Heritage, making your total Animal Companion (character level minus 1).
If you instead wanted two companions, you could then take Boon Companion twice. This would mean, up until level 5, you'd have two Animal Companions that were each level 5. After that, your Cavalier Animal Companion gets left behind, permanently stuck at 5th, while your other would advance at your full character level.
Not a bad idea if you wanted a tougher than average Horse, for example, and an attack animal. But generally you'd be better off sticking with one fully advanced Companion.
