I found the class total thread interesting and I noticed some one list their races as well. I was curious to see how diverse the Society is so here is my list of played races.
Human 3
Half-Elf 2
Half-Orc 2
Wayang 2
Gnome 1
Tiefling 1
Kitsune 1
Tengu 1
Edit: These are the number of characters I have of the listed race not a list of levels played.

Let's see.
Human 3
Aasimar 2 (Both with Scion of Humanity, but otherwise default Aasimars)
Undine 1 (Not actually played/used yet)
Zombie 2 (by which I mean dead PCs, because let's face it, the society wouldn't want to lose any body when they can generate cheap labor. For what its worth, the dead PCs were Half Elf and Half Orc.)

Humans 4 (Varisian, Taldan, Osirian, and Kellid)
Dwarves 2
Oread 1
Ifrit 1
Aasimar 1
Was doing mainly humans and dwarves, then got on a kick of trying to figure out what do so with some of the race boons I've been getting for running things at conventions. And finally came up with a halfway decent idea for an aasimar besides it being a mechanical advantage, though it is that too. :-)
One of the humans, the oread, and the aasimar are pure GM credit right now, and haven't actually been played. All the rest have been played multiple times. The Varisian is my -1, and he's 11th level with no GM credit. Playing him all the way through.

Undine 1I have a hard time passing up the bonus feat and skill point per level humans get!
Since other have elaborated, my humans are 3 Taldan, 1 Chelaxian, 1 Garundi, 1 Varisian.
Will have a samsaran or ratfolk after Gen Con.
"Excuse me, sir. Only two of your humans are truly Taldan, That Andoran of yours seems to be a bit of a mongrel. He has to have some Ulfen blood in him.... Far too tall and pale to be Taldan. I hear he has even passed himself off as a Chelaxian on occasion."

Presently Fielded:
1 Gnome (7 levels)
2 Humans (one fey-touched Taldan, one Chelaxian) (4+5=9 levels)
1 Dwarf (2 levels)
2 Aasimar (one Emberkin, one unknown lineage/"plain") (5+1=6 levels)
1 Wayang (4 levels)
3 Elves (8+6+6=20 levels)
Coming Down the Pipe:
1 Dhampir (Ru-Shi) (1)
1 more Wayang (1)
Maybe-More-Far-Off:
1 more Human (mostly Ulfen) (9+1=10 levels)
1 more Dwarf (2+1=3 levels)
1 more Aasimar (Angelkin) (6+1=7 levels)
1 Tiefling (unknown lineage/"plain") (1)
1 Halfling (jinx) (1)
1 Half-Orc, Half-Elf, Elf Human, Gnome, Tiefling, or Aasimar (very much undecided all the way around) (?)
As Much Hypothetical As Anything More:
1 more Tiefling (vrock heritage) (1+1=2 levels)
1 more Dwarf (3+1=4 levels)
1 Half-Elf (Jungle Elf lineage) (1)
1 more Elf, Half-Elf, or Human (?)
Honorable Mention:
1 Half-Elf (2 levels, cannibalized to turn into a very different character, one of the Elves mentioned above, after winning The Dragon's Demand)
1 Samsaran (6 levels; the character I played in The Dragon's Demand)

Human 8 (Osirian, Ulfen adopted by Dwarves, Tien, Andoran, Varisian, Taldan, Qadiran, Varisian)
Nagaji 1
Elf 1
Gnome 1 (by way of Tian-Xia)
1 GM credit likely to be Undine.
Tengu 1 that I play at 1st level whenever I don't have a character and don't want to play a pregen. I can't figure out what I want to do with him, so I keep cycling him onto a new character number and retraining the old one into something else.

Races played:
Aasimar 2 (1 base, 1 Angelkin)
Tieflings 2 (1 base, 1 Demon-blooded)
Tengu 3(two of which died at one)
Ifrit 1(died at level three)
Human 1 (made it to twelve!)
GM Credit 1 (not playing 'til after level one, will either be a Sylph or something out of Core, most likely Elf, Human, or one of the little people, or I might take another crack at Swordmaster Tengu)

Done 1 of everything (available to all) and 3 extra who have played human so far but two of which will morph into Half Orc (can use a whip with city dweller) and Aasimar/tiefling/half orc (cleric of Apsu with bite IC claiming to be half dragon)
also got a GM credit that may use a sylph boon if I can think of a good Sylph idea

Ooh, Race post! Well, I've only two PFS characters, but I've got a rich diversity in my gaming career.
1 Half-Elf
1 Dhampir
EDIT: Well, I suppose my third character will be all Bride of Hell - like and be a tentacle hair witch grappler type ..best bet is Tiefling for an appropriate Lovecraftian-spawned horror.
1 Tiefling

Minor corrections (I was going by memory)
That should be Taldan adopted by Dwarves, and Ulfen instead of Andoran. Not sure what I was thinking there.
And it's actually 7 Humans and 1 Half-orc (the second Varisian). But he's still level 1, so it's ok for him to have an identity crisis. He'll sort it out in a scenario or two.
