Macross Frontier. Can't hype it or the music enough, though it does suffer a bit from the typical anime approach of "we're only going to give you the real plot when we're damn good and ready for it."
Trigun's one of my all-time favorites. I don't know if Vash is more Stupid Good or Chaotic Stupid, but a lot of inspiration for paladin characters could be found here.
And if you want just about every cliche of anime combined into one series simultaneously, there's Magic Knight Rayearth.
Also, any D&D fan who watches anime needs to see at least one version (OAV or series) of Record of Lodoss War, the series actually based off of its creator's D&D campaign.

Wow, didn't see this thread. I feel ashamed. I started a club in College, and it ranks as my second highest hooby (since D&D is actually easier to share, and I have to pay for my D&D stuff).
I cut my teeth back in the day on:
Ranma 1/2 (I've read enough fanfiction of that to not only fill a library, but permanently warp my views on gender roles and relationships)
Blue Seed

Magic Knights Rayearth

Oh My Goddess
To name a few, that just gives you an idea of time period. Yay for having a friend in high school who blew his entire disposable income on anime all the time.
But the years roll by, what do I watch now? Not as much as I read manga, but still a lot.

Game inspiration wise, I've been trying to figure out a solid system for a Devil's Fruit template (ala One Peice). That and a "weapon/meister" system from Soul Eater. Good stuff.

Chrome Shelled Regios; Watched the first episode (YAY yurrisan!) and have been hooked.
Casshern Sins; I've been a Casshern fans since I was like 6. And this series is just plan awesome!
Hajime no Ippo: New Challenger; Never seen
The Tower of DRUAGA: The Sword of URUK; I've heard about it, but is worth the watch?
Gintama; Watched the first episode and I quit

Naruto Shippuden; Ah Naruto... The manga is awesome! But the current filler SUCKS!!! (I miss you Dattebayo, best subs ever)

Tetsuwan Birdy Decode 02 - The first season was awesome and the the second looks to be aswell.
Kuroshitsuji - This is hilarious!
Tales from the Abyss - I really want to play the game. The anime is great
BLEACH - The current arc is beyind awesome and the manga left off in a great spot.
Hokuto no Ken Raoh Gaiden - FIST OF NORTH STAR!
Darker than Black - If you haven't seen it you have too!
Kurozuka - Just a really gorey anime

The Tower of Druaga I think is definately worth a watch if you are a fan of fantasy anime. Of course you'll want to start with the first part, the Aegis of URUK.

Hadn't heard of Xam'd: Lost Memories, Tetsuwan Birdy Decode 02, or Kuroshitsuji. I'll definitely check them out. I played the Tales of the Abyss game so I wasn't that interested in the anime. I stopped watching Bleach because of the Boundt saga. I like Darker than Black the couple of episodes I saw and I liked Fist of the North Star, but I need money to get the DVDs. I also liked Kurozuka and forgot to add it. Also forgot Shikabane Hime

Boundt Arc, like most filler suck. The current arc, Turning ack the Pendulum, takes place 100+ years before the start of the show. Gives you a good look at Soul Society, the captains, and vice-captains, those who would be the Vaisord, at that time. Plus you get to see Aizen go from sneaky vice-captain to what he is today.
Though my problem is I feel filler episodes on the horizon.

Catching Vampire Hunter D and Robot Carnival while staying up late turned me onto it, as did that one obscure short they used to show on Liquid Television. Someone will know what I'm talking about. The one with the racing and the ghosts?
Wow, I remember watching Vampire Hunter D and Robot Carnival back-to-back on TBS as my first exposure to anime too, and I know the short you're talking about but don't know its name. (The Cake song The Distance always makes me think of that video.)
I was a VHS junkie when I was in junior high school so I actually recorded Vampire Hunter D and Robot Carnival while I was watching them for the first time.
My next exposure was going to Blockbuster and renting anime (because they were the only place around here that had it at the time). I rented Akira and my friend rented some other crap I don't remember.
I'm a sucker for half- monsters so the anime I like presently is Inuyasha. I also liked Wolf's Rain a lot when it was on. I love how the end is the beginning. Enjoyed Big O too. I think it's neat that Cartoon Network co-produced the second season of the series with the original production company because the show was canceled after its first season in Japan without a finale.
I remember renting the Guyver series and watching them. I'd be interested in seeing the new Guyver.
I'm tempted to buy random anime at my local video store just to try it but it costs too much for me to go sampling like that.
I always wanted to watch more Read or Die: The TV but I only saw a few episodes here and there. I think being able to control paper like that is cool.
