Edit: So, this Celestial Heritage feat that you've created allows us to either choose whatever variant we want or we roll three times and choose one out of those three. Is that correct? I just want to make sure I understand it clearly.
What if we don't like any of the three and want none of them? What happens then?
I don't understand it either. Why would anyone ever choose the option to pi2a variant ability from three randomly rolled options, if he could just any one from those 100 (99)?

I'd like to submit Shedinn here. He didn't get picked in a very similar game, and I only had to up his ability scores.

Only change I need to make is, add Iron Will as a 1st level feat, because Power Attack is free.
It's a Trapper Ranger / Phantom Blade that would eventually dual wield Bastard Swords. He fulfills the skilled role due to Trapfinding.
I'm surprised to see several Rangers but no Slayers, also only one Fighter. If I weren't itching to try out Bengi's archetypes, I would have chosen either of those over Ranger.
Studied Target along with trap finding available at 2nd level makes it better than Ranger IMHO. Gestalt solves the Fighter's problem of lacking out of combat utility.
It is true being guaranteed lots of demons bolsters Ranger's Favored Enemy in this AP, but I'm still surprised by the number of Rangers.
Ranger, which is usually unpopular, simply gives an extremely strong chassis for more interesting (medium bab) combat classes via gestalt rules. Hell, with Favored Enemy Spellcasting and Foebane Magic you could make a super strong caster, too: effective +3 to saves DC OR Favored enemy bonus applied to ranged touch spells.
The dust was heavy. Shedinn gave his mount the spores, but they both couldn't really see, where they were going. The demon's tracks were hard to follow on this open plain here in hell. How he got into hell is for someone else to find out, but Shedinn's job was to get rid of the intruder who was surely up for no good - or at least for no lawful.
At a large boulder he stopped, keeping some cover from the dust storm and rethinking his choices. Suddenly a blueish portal opens in front of his face, only 20 cm in diameter and a hand of unknown origin reaches through it. It holds a letter and hands it to Shedinn. Surprised he takes it and opens it, while the portal closes again.
”Please make haste to the Crossing House tavern within the city of Hyraeatan. Your particular services are required. If you are unable to make the journey on your own, you will find attached a token capable of created a one way portal to Hyraeatan. It only works once, so use it wisely.”
"Hyraeatan? I've been there. Weird place. Hm, no addresser or any name? I have no time for this then!"
He crumbled the paper and threw it over his shoulder before riding on. He did keep the token, though.
"Well, I guess we have in common that our existence was someone else's decission and not a natural event." At least I had a real life at one point...

As the others come he turns with Eleven. "I'm neither unable nor unwilling. I'll do whatever it takes. Whatever it takes."I love that I just said that!!!
"Well, I have an uncountable number of enemies in the Abyss. That's exactly the one place in the multiverse that is not a good place for me to be these times. Might compromise the mission, you know."
"Well, I'm no Shearlock Homes, or whatever that guy's name was, and investigation isn't my strong suit. But if you need to press someone for information old-school, I'm eager to help." He produced a fake smile and made very obvious air quotes during the word 'investigation'.

A voice from the corner of the room surprises those at the travel. They might have forgotten about Shedinn's presence at all.
"I really couldn't be bothered with the lady's problems. But the portal problem is everyone's problem including mine. I'm not a selfish person normally, but I have a job and purpose and I can't do it without the portals."
I didn't mean that I hate the alignment system and that we/I should ignore it. I just don't see the need to meta discus it, because enough people have done that. There are probably PhD these about it.
Just play it as good as you can and want.
Shedinn only watched the strange conversation. He took in all information those people or things foolish presented but wouldn't react to any. He stood near a wall leaning with his hat back in his face and waited. For once it was refreshing that people didn't care about his state of aliveness.
Suddenly the conversations get interrupted. The door springs open with a heafty clash.
A tall person, from the stature you'd assume it to be a man, walks through. He wears a long and heavy leather coat and a large hat. Strapped to his back you see parts of a heavy metallic weapon, might be a flail of sorts. His hat is so deep in his face that you can't make out any of it and it seems he has his head tilted forwads, too, and he might be purposefully hiding his face.
He walks in silently until about half way towards your table. He lifts his head towards the ceiling and shouts at it "CAN WE GET THIS OVER WITH? I DON'T HAVE ALL DAY!"
When he lifed his head, for a brief moment you saw his face. Or at least what used to be a man's face. All that remains is a skull with flames burning in the eye sockets.
When he tilts his back down and sees your shocked (or not shocked) faces he suddenly speaks in a soft tone. "Don't be afraid. Death is inevitable. It will happen to aaaalmost everyone. But not many will look as good as me when it does."
