Yes, basically a vulcan who doesn't follow Surak. He's still more logical than humans, but doesn't fake lack of emotions.
Since Samy is taking Sec/Tact, and that was one of my two, I'll take the other and go with First Officer. (If nobody wants to be captain, I'll go captain, but captain might work better as an NPC since he won't be going on away missions).

One of the big changes that occurred with TNG and forward was the requirement for first officers to keep the captain on the ship.
If you think about it, it's really stupid for the captain to be on every away mission (he's in charge of the ship, responsible for it, and also theoretically the most senior, wisest, and most highly trained officer).
One of the things in the first season was Riker stopping Picard often even when he wanted to go on a mission. The Captain should only be going on Diplomacy missions and other 'show the flag' type things. Never on investigations or hazardous duty.

The procedures that are useful/applicable to a 1000 person Galaxy class starship may or may not be useful/applicable to a small exploration vessel.
Our ship might not have all the roles that something like the Federation flagship has -- might not even *need* all of those roles. Many of them might be combined. Of course, the first concern is what is fun for the players.

And how will captain then punch out ugly aliens and romance the pretty ones?
I was torn on the role of captain from the beginning. Should I have him/her be an NPC, a truly senior officer with a new and untested crew, or let a player be captain. Still torn about it to be honest.

I have realized that finding vulcan male artwork that isn't Spock or Sarek is next to impossible. :(
Female vulcan artwork (some of which is not cheesecake even) is a lot easier. *sigh* I will either have to go without artwork or change genders. :(

That reminds me. I have a custom plugin I wrote for Google Chrome for a couple of Star Wars games that replaces avatars on here with custom ones. I'm intending to use it for at least my character since I assume the paizo selection for "things resembling trills" will be null, and I can just generate myself a character in Star Trek Online (which might be a good approach for you, too, mdt?) - so if anyone else wants to use it as well, once we get underway you can send me artwork and your alias name and I'll get it all incorporated and happy.

With respect to Vulcans that didn't accept logic: Here are some more:
1. Separated a long time ago: Romulans (this is the canonical origin of the Roomulans -- they NEVER accepted the reforms of Surak). On rare occasions, exiles wind up in the Federation (the only one I know of that appeared on screen committed suicide in a TNG episode, but another one is mentioned in DS9).
2. The one who was the main adversary for much of Star Trek V ("Let me feel your pain . . ." -- and had a figure somewhat resembling Bill Clinton, too).

They contracted with Niven/Pournell to add the Kzinti in. However, it was only in the Saturday morning Trek cartoon.

As for the "Captain" problem, though it adds some what to the 'level' of crewing....
An Admiral, for what ever reason, is aboard and over seeing things (Insert DM's nefarious plot hook for more adventure) and hence the 'extra' layer of supervision. So, now the DM gets to 'command' for a while as the player Captain settles in and eventually....
*Ponders just what is in cargo bay 13 and why there are 'Warning'/No unauthorized personnel' signs all over the area...*

As to the spelling, it's a bit strange. Kzin is the name of the empire, if I remember correctly, and Kzinti is the name of the race. So Man/Kzin wars is what most people remember from the book covers. I'd be willing to bet they went with Kzin as it was smaller and easier to pronounce. :)
