For instance, if somone's a multiclass Cleric / Hex Channeler Witch, do the dice stack? What about the uses per diem?
Sneak Attack dice stack, so that would be pretty analogous, but the rules I see appear silent.

FAQ:Channel Energy: If I have this ability from more than one class, do they stack?
No—unless an ability specifically says it stacks with similar abilities (such as an assassin's sneak attack), or adds in some way based on the character's total class levels (such as improved uncanny dodge), the abilities don't stack and you have to use them separately. Therefore, cleric channeling doesn't stack with paladin channeling, necromancer channeling, oracle of life channeling, and so on.
So track separately your uses per day and number of dice.
Note that some PrCs DO stack like holy vindicator

Pretty much.
One of my personal favourite channeling builds would be a Cleric 1 / Ravener Hunter Inquisitor X, which with the Channeling Scourge feat would give you full scaling negative energy channel for the purposes that matter. Ravener Hunter would let you pick up the Channel revelation, giving you almost full scaling progression for positive energy. (still capping at 10d6 if I remember the scaling right at level 20). Just make sure that your cleric domain powers are not reliant on level scaling.
