If I cast a 3rd-level summon animal spell to conjure a boar, then follow up with magic fang, what exactly happens?

Does it get a +1 to hit and an extra die of damage?

It does what it says: "The unarmed attack becomes a +1 striking unarmed attack, gaining a +1 item bonus to attack rolls and increasing the number of damage dice to two if it had only one."

Does it only have 1 dice of damage? No
So that means it gets the +1 item bonus to attacks and that's it. Well, the attack becomes magical if that matters.

Instead use it on a Black Bear or a Blindheim
Then you get your extra dice.
