So this might be strange or weird but I want to cook food for my groups next session, the twist is I want to cook food from where their characters are from. So Im looking for one of two things-
Either the real world equivalent of Korvosa, Cheliax, Shonti, and Irrisen
OR
A Pathfinder style cookbook with lists of food from all around the world.

Not one of the mentioned regions, but Ravengro in Ustalav has a tavern offering the following:
Vampire steaks (cuts of beef skewered on thick wooden spikes),
Wolf balls (lamb meatballs served on plates painted to look like the face of the full moon),
Corpse chowder (a thick stew with red broth and chunks of meat),
Liquid ghosts (a sweet pale ale that glows faintly with a greenish tint).
Note that tonic water will glow blue under UV light.

I found the recipe I mentioned before. It's in Edge of Anarchy (set in Korvosa), but is more like road-food for Varisian caravans than what might be served in the city. It's a spicy chickpea stew. Looks kinda like goulash in terms of spices, so Korvosa food could lean more towards Baltic/Roma style cuisine?
As for the others my totally random guesses:
Shoanti - likely to be cooked in an open fire, so plenty of skewered meats, maybe flatbreads?
Irrisen - Arctic cuisine a la Norway? Lots of smoked and salted fish and/or meat? Berries?
Chelaxian - I agree with Gorbacz, though I'd lean more towards Spain than Italy.

Well, Korvosa is a Chelaxian colony in Varisian lands. So the Chelaxians should have their cuisine (and I agree Spain, Italy, and southern France would be a good model for that), and the Varisians would have theirs. Varisians are based on Romani, but a quick look can't find much information on Romani cuisine as distinct from the surrounding cultures.
