You can have only one creature designated as your prey at a time. If you use Hunt Prey against a creature when you already have a creature designated, the prior creature loses the designation and the new prey gains the designation. Your designation lasts until your next daily preparations.
From the bold text, it indicates that you may only have one creature designated per day. This sounds wrong. It also seem to contradict the previous line on switching prey. Is the intent, and should it say, "Your designation lasts until you designate a new creature or until your next daily preparations" ?
With so many of the Rangers feats tied into Hunt Prey, I don't understand why they would limit it to one creature per day.

There's no contradiction. You even referenced the relevant line, which says that if you designate a new prey your previous one ends. Easy as that.
Just because the bolded text says hunt prey lasts until your next daily preparations doesn't mean it absolutely unconditionally lasts until then, that's taking things out of context. It's like saying that a spell that lasts for 1 minute doesn't end if you Dispel it because the spell lasts for 1 minute and it hasn't been a minute yet.

It is a single action to hunt prey and designate. You can designate a new prey by spending a single action on a creature you can see, hear, or are tracking. If you do, they original hunted prey ends. If you don't designate a new target it ends with your daily preparation. The original hunted prey can be either dead or alive for you to switch targets.

You don't need to wait for an official forum answer that has a pretty good chance of never happening. The rules written in the CRB already clearly allow you to hunt a new prey. Nothing anywhere says that you would not be able to, as was already pointed out in 2019.
