Except that poisons are unique in that it’s a two step process to apply their ongoing effect. With a bomb, you hit the target and the persistent damage effect is applied. With a poison, you activate the poison, your target eats the poison, the target gains the affliction. The question is what happens at step two. Does the food remain poisoned or does the poison lose potency? I’m pretty sure everyone can agree that a target that gains the affliction while the poison is potent keeps the affliction.

Agreed, I can't imagine that there would be an exemption that a poison created with quick alchemy which was inhaled or introduced by injury would stop working after 1 round.
Almost all non-injury poisons have an onset time of rounds or minutes, so those wouldn't work at all if we assume inert after 1 round. I'm not sure though, maybe it's meant to not be useful with Poisons.
The same question applies to Elixirs also. Would a swift antiplague stop working after 1 round?
If so, then the only use for quick alchemy is for bombs and other destructive items.
