Side-question on Attacks of Opportunity...
Is it true that only Fighters can make Attacks of Opportunity in PF2?
Fighters have it by default, Champion and Barbarian can get with a class feat if they wish and Ranger/Monk/Rogue have their own version of AoO that they can get with a class feat as well.

From level 1? Only fighter.
Barbarian, Champion, have to pick the class feat at level 6.As noted above rogue and monk have their own version too.
Technically all other classes can pick AoO with the fighter MC archetype if they so desired.
Some monsters have AoO but they are rare.

Is the enemy still considered "prone" (-2 to AC) when they are getting up and eating an AOO?
The Trigger of AoO is the opponent using the Move Action.
Simultaneous Actions
Free actions with triggers and reactions work differently.
You can use these whenever the trigger occurs, even if the
trigger occurs in the middle of another action.
You make your Attack of Opportunity as soon as the Trigger is satisfied, in this case the opponent using the Stand move action. Since the Stand move action has not completed, the enemy is still prone for the AoO. This is how AoO is able to disrupt Manipulate actions. If it only went off after the action, you could not disrupt that action. Same with moving out of a square, if the enemy had already moved out of your reach when you could make the AoO, you couldn't make the AoO.

Move Actions That Trigger Reactions
Some reactions and free actions are triggered by a creature using an action with the move trait. The most notable example is Attack of Opportunity. Actions with the move trait can trigger reactions or free actions throughout the course of the distance traveled. Each time you exit a square (or move 5 feet if not using a grid) within a creature’s reach, your movement triggers those reactions and free actions (although no more than once per move action for a given reacting creature). If you use a move action but don’t move out of a square, the trigger instead happens at the end of that action or ability. Some actions, such as Step, specifically state they don’t trigger reactions or free actions based on movement.

Fair dues, I missed that bit. I recant my previous statement.

Because AoO is a reaction, I believe it occurs after the trigger has happened. It doesn't disrupt move actions by default, so they'd be in the space/position they moved to just before taking damage (and in the case of a knockdown would fall 5 ft away from you). Stand Still crits and AoO with that one stance would cause the movement to stop, but the specifics are beyond me when I can't check rules. The order of events for actions and triggers is definitely listed somewhere, though!
