I will say, Swedish pancakes and Swedish Tea Rings are f%$#ing awesome.


Lutfisk is often done from the cod family of fish. But... it seems you have misunderstood something: it is dried, not salted.


Just dried with no salt? So bad, I don't think I can get that one. Here it is salt dried.

Well, some people love lutfisk. I can't say I agree. However, it seems to be a factor that people who hate it have often gotten lutfisk made wrong by not enough de-luting. Perhaps I should try it again.

I have trouble imagining lutefisk done right. I cant imagine a right way at all.... Though I have only been subjected to that torture a handful of times. As capn says, we got lots of nords in the Midwest. In fact, my home is in the part of Minneapolis they call Nordeast (north east corner of mpls).

It's similar with saltdried cod. If you don't hydrate it enough to remove the excess of salt it's disgusting. And if you hydrate it too much it loses all taste.

I'm not a big fan of cod but well prepared I enjoy it from time to time.


I'm from the southern US and deep fried catfish is practically a staple food... lol. There are numerous catfish restaurants in my area and most are really, really good.

I'm not too fond of most river fish, I like sea fish much better. Probably because I am more used to it.


I like my fish fried.

Pea Bear and Tiny T-Rex are all about sushi right now. I tried it, didn't like it, but I'm sure I'll have to try it again ("try this kind dad!").

I love sushi but since its explosion in popularity its hard to find quality. Lately ive been hitting up Robata houses for better Japanese cuisine.


I don't mind sushi, it's the seaweed mostly I can't stand.


Of course now I can't remember what the cartoon was that had sentient crime fighting sushi...

Just to let everyone know, I won't be on-line very much tomorrow. I have been offered, and have accepted a four hour security detail in a nearby city (Greensburg, for those familiar with SW PA) from 8 to noon. I will not be home until 2 or 3 PM.

I hated sushi the first time I ate it. Then I realized that it wasn't very well prepared, not even the rice was proper sushi rice, just regular round rice overcooked so it went sticky.

But the first time I tried a decent sushi I fell in love with it.
If you don't like the nori seaweed try nigiri sushi. It doesn't have nori weed and it's delicious.


There is a world of difference between good sushi and bad sushi. Which always amazes me cause you wouldn't think there would be.


Bad sushi is barely edible.
Any dish containing rice that is not properly done is barely edible.
I spend 25 years of my life thinking I didn't like rice because it was so poorly made at my home.
Weirdly enough, rice is one of the things that I cook the better. Genetics didn't play a role here xD


yeah I can't even add up how much time I spent learning to make rice properly. Hard to believe the difference it makes.


There are many techniques to cook it so it can be difficult to choose the right one for each dish. I use at least these different techniques:
-Paella (1 rice, 2 water, never move the rice)
-Risotto (slowly add water and move from time to time)
-1 rice, 4 water, remove water after cooking.
-Steamed.
-Fry the rice after or before boiling. When cooking paella I do it before. When doing long rice for oriental dishes I do it later.


Risotto so that is the name of that thing I make. *mind blown*

Trying to get a meager amount of sleep between the time I got home and the time I need to get ready seems to be a lost cause. So I might as well just stay up.

Regarding cod: Fresh cod is absolutely delightful. Fried or in the oven, with potatoes, grated horseradish, and melted butter. Yum yum. I admittedly have very little experience with salted fish.

Regarding sushi: Japan has several different types of rice, of course. A decent approximation is rice for porridge. What you must do though is wash it thoroughly before boiling it. Add in rice vinegar and sugar for the proper taste. And of course, since raw stuff and rice is pretty vulnerable to infection, keep in mind that sushi restaurants buy their fish in the morning. The longer the day gets, the worse the risk (and the taste) becomes. The simple solution is to eat fish sushi only at lunchtime, in the evening it's better to have vegetarian sushi or other japanese dishes (like yakitori or yakiniku, perhaps?).


I've made sushi before with decent results and definitely will repeat the experience.
Eating sushi out of home is too expensive at this time for me.

Years ago when I was learning to cook, I had the bright idea to ask the helpful people at the Asian grocery I shop at how to best cook rice. I was directed to a Japanese model rice cooker, which I'm still using twenty years later. Perfect rice every time. Also good for quinoa. :)

There's a reason I describe myself as a lazy cook. I spend a lot of time figuring out how to get the best results with the least effort. :P
