How is multiple instances of variable bleed damage supposed to work?
Say I have a 1st-level monk with the Belief's Bite feat, for example. If I hit someone twice with my flurry of blows, how much bleed do they take each round?
2d4 take highest each round?
2d4 take highest and use that result for rest of combat?
Something else?

The link I provided shows that James Jacobs says you should roll each round.

It seems that, according to James Jacobs, you roll every single round.
So the only thing left to determine is whether or not you roll multiple dice (take highest) or if you only ever roll one instance of 1d4 each round.
Also, what if you have two different instances of bleed at different rates, say a 1d4 bleed and a 1d6 bleed effect, for example?
I guess you would have to roll both and take the higher of the two.

I would expect table variation... alot of table variation
but since we know it doenst stack ( since they come from the same effect/source)
I would just ask you gm if he wants you to roll once or twice and take highest.
Myself personally ( as a GM) i would have the player roll twice( and take highest)

It's not even a matter of "same source." The rules for bleed effects specifically state they never stack unless they are two different types of damage (such as hit point bleed, and ability score bleeed). Even in the rare instances where you might be suffering from both hit point bleed and ability bleed, they still don't really stack, since they basically don't interact with one another.
I'm thinking more and more that you have to roll all the instances of bleed and take highest. It's really the only thing that makes sense in the case of having different variable bleed amounts. And if you have to roll all the dice for different variables, why then wouldn't you roll all the dice for the same variables?

How does variable bleed stack with static bleed?
ie: The monk in your example gets a hit in for 1d4 bleed damage. Before the foe's next turn, the monk's 5th level rogue ally gets a bleeding sneak attack in for 3 bleed damage.
On the foe's turn do they take 1d4 bleed damage, 3 bleed damage, or the higher of 1d4 or 3?

It says in the section on bleed:
When two or more bleed effects deal the same kind of damage, take the worse effect.
Here's a link directly to it just in case:
D20pfsrd BleedIn the example afterwards it talks about ability drain being used in place of ability damage since it's the worst of the two for the target, but I think it's still applicable to damage.
I would think the worst would be the highest of those damages.
