I'm trying to work on an unchained summoner for a game of mine that has wide open spaces and lots of small enemies to fight. I wanted to make a gargantuan-sized eidolon who's whole thing is it stomps around the battlefield, smashing everything in its path. Looking at Bulette Rampage it looks like I could do that. Unless I missed something I only need to qualify for heavy armor to use the feat tree and I can turn some of the eidolon's natural armor into normal armor AC. I'm wondering, which one would be more effective: Trampling enemies with an evolution or bulette style?

Bulette Style requires you to be wearing heavy armor, not just have an Armor bonus. It isn't noted on the d20PFSRD, but that's because they don't list all the details about the style like they are presented in the book. Otherwise, why would there be the special qualifier for the feat stating that a Fighter with Armor Training can use medium and light armor with lesser bonuses?
