So my GM has grown tired of my %&#$, and found an efficient way to negate me. We are playing Serpent's Skull and are 10th level. My witch gets blinded. A lot. Virtually every time we fight a spellcaster, i get hit with a blinding spell.
I'm considering Beast Eye for my next hex. Am i correctly understanding the rules? My senses would be transferred to my familiar, and I use his eyes to see..and if i can see with his eyes, I can use my evil eye and other hexes and know where to target my area of effect spells.
My other option is to just keep Remove Blindness prepped constantly. Thoughts?

I doubt you can use evil eye through it, but since you can pinpoint enemy locations, you can use your normal eyes for evil eye (although it will be rather glassy...which may or may not add to its aesthetics)
Overall, it seems like it should work though. Not sure if it is a good trade off (it takes a standard action, so it isn't any more efficient than remove blindness; hex versus a 3rd level slot or two- your choice), but your GM is putting you in an awkward position with metagaming since EVERYTHING does the same opening move (how do they even know you are a witch? Have you tried disguising yourself as a normal porter?)

She's not subtle. This is an ongoing contest between the GM and I. It's been done by an evil cleric who knew the party, and a wizard and now another witch who have been spying on us for a while. Between the sentient parrot and the flying, she is obviously an arcanist of some sort. The cackling is a dead give away.

Oh we have been having a great time for the last year. Enemy spell casters target my witch as the biggest immediate threat. Combination of evil eye, enervation, and a nasty capstone spell or slumber hex end a lot of fights in a hurry, so to keep the big bads alive and kicking, she has to be negated to make it challenging.
Blindness has come up often enough that I need a reliable way to counter it. Another favorite tactic of his is to endanger innocent NPC's. The witch is currently the only good member of our extremely neutral party, so if she has to yank a slave out of quicksand instead of fighting that drags things out.
My most recent blinder is a higher level witch with another PC's mother as a hostage. I'm not changing alignment, so there's no way to counter threatening innocents, but I want him to come up with a new trick besides blindness

Haha, as long as you're enjoying it, it's fine. Hmm... Beast Eye definitely seems like it should work, as should the hex Hag's Eye. (Although, Arcane Eye says "it sees exactly as you would see if you were there," so maybe not.) Since Remove Blindness doesn't require a CL check or anything, a scroll of it should be perfectly effective. Both of those take a standard action (at least), so hopefully your GM considers that a sufficient nerf that he won't start crippling you another way.
You also might consider prepping more area-of-effect spells like Cloudkill, Confusion, Waves of Fatigue, or Black Tentacles; summon spells like Summon Monster V; or buffs like Heroism or Death Ward. With a bit of support from your party and familiar, all of them should be reasonably effective even while blind.

Just make sure you're always holding it. Since your character gets hit with blindness a lot you can easily roleplay it as her being paranoid that she'll get hit with another blindness spell.
And really, if the GM wants to reduce your effectiveness she should use some stuff that is mindless like constructs and undead since some of the witch's most powerful stuff is mind effecting.

And it can be roleplayed as being paranoid THAT THEY WANT YOUR MAGIC EYES. You can't have them, THEY ARE MINE!
Because, even if you are a good witch (Glinda, you lying piece of...you knew how to get me home this whole time, and you only set me out to murder your rival, didn't you?!), no one ever said you had to be entirely sane. Really, most of the time, you have to be at least a little touched to agree to promises of power from mysterious sources in a world like this.

I agree with Blackbloodtroll here, but I am going to go into more detail.
If the GM is outright targeting your character with blindness every single encounter, this is really problematic. The problem here is not rules-oriented, or even tactical. The problem is social.
If the GM doesn't know any other way of balancing combat other than blinding your character, this is a problem. You need to talk together to figure out some other solution than neutralizing your character every battle.
Try to make this non-confrontational. "Hey, can we talk? I've noticed a recent pattern in game battles and I'm wondering if we can talk about it."
Avoid using any sort of accusatory language, and acknowledge that your character has a way of shutting down battles. Ask if you two can work together to find an alternate solution to this. There has to be one.

@blackblooktroll, Hmm: It seems like the tone isn't as oppositional as you're suggesting.
Prevention is good:
Buff your saves (Cloak, Con Belt, Heroism).
+1 Reflecting Mithral Buckler.
Ring of Counterspells.
Amulet of Netted Stars.
Wand of Greater Invisibility.
Improved Initiative.
Veiled Eye (headband slot).

It's not every encounter, it's 3/4 of powerful spell casters. Certainly enough to be noticed. We had discussed it previously and it's a great campaign, but he's making me work and I'm trying to make him work too. Blindness and in several cases blind folding has proven an effective tactic, one that I use myself if I can locate a caster. There's not always a spell caster, but he does wind up rebuilding his NPC warrior types to give them a fighting chance against high DC spells/hexes. Mentally immune and/or Elven villains show up too.
And she's not entirely sane. She's a Calistrian who takes revenge really seriously and brutalizes her enemies. But she's very nice.

Blinding a witch is the best defense, so the fact that your enemies are doing so makes perfect sense... especially if they know your tactics ahead of time.
Try approaching it from the other side... ie: what means are they blinding you? There are not alot of options for it, but the blindness/deafness spell seems the most likely... and there are lots of ways to protect yourself from that.
a ring of counterspells (with blindness/deafness therein). They're pretty inexpensive.
spell immunity (lvl4 cleric spell). Though the duration isn't perfect and would require some foreknowledge of an upcoming fight.
Also
Remove blindness is a 3rd level spell, so can be made into potions. Have a few of those. Or make a wand of the same.
Hell, just use dispel magic.
