I don't know... In these games, it just feels more awesome to use the NPCs and/or iconic characters than your own. The Dragon Age games made it a bit better to create your own character, and kudos to the 2nd game to add a voice to it too. (Seriously, in Mass Effect 1, Shepard talked every line you chose and the scripted dialogue, but Dragon Age 1, which came after, didn't have that feature until the sequel.)

Like I said, I stumbled on some footage of Shadow over Mystara, and I thought: "Hey, that would make a nice Pathfinder game!". Sure, Dragon's Crown fits also the bill, but considering their shaky release date and rather bold art direction, I'd say that a Pathfinder game is more likely to happen before that game comes out XD.
To be fair, a lot of people don't like voice acting for every line. Most people I have seen play will skip through it because they can read faster than listen. Additionally, there was way more dialog in DA1 than any of the Mass Effects. Costs are a huge factor, and I would rather not see potentially multiple novels worth of text voice acted. Planescape:Torment, for instance, has an estimated 8 novels worth of text.

Hypothetically speaking, if someone were to just show up out of the blue with the engine for it in hand, would some sort of licensing deal to just full on adapt particular pre-existing APs into Baldur's Gate style single-player experiences be something you'd be interested in seeing happen, or would you prefer that sort of thing stay away from existing material and do its own thing, content wise?
James already touched on the content/engine portion of the question; I'd like to address the "someone out of the blue" portion. Generally, we only consider licensing to established companies that have reputations of quality and leadership positions in their particular field. "Who they are" is just as important as "what they want to do."

Increasing by the day, it seems.
inXile, for example, has more or less said that their development pipeline can handle what amounts to one new project a year. They're clearly cool with using licensed settings. And there's Obsidian, of course. Harebrained Schemes will also be an attractive option if Shadowrun Returns ends up being a high-quality production (and it looks like it's shaping up that way) - a strong adaptation of both rules and licensed setting.
And that's just a short list of Kickstarter darlings. There are plenty of other (more traditionally funded) studios with formidable RPG development chops. We're sort of looking at a coming golden age of isometric RPG titles; I'd love to see Paizo hop on that particular bandwagon sooner rather than later.

And on that note, I'd like to see Pathfinder fighting game starring the Iconic PCs and done in style of Blazblue and other Arc System Works games. (i.e. heavily plot-driven a and story mode resembling a visual novel.)
The Sub-Boss would be Laori Vaus and the Final Boss would be Runelord Karzoug.

By the way, the fact that we've licensed Goblinworks to product a Pathfinder MMO *does not* rule out the possibility of other Pathfinder videogames. If we find the right partner with the right pitch, we'll do it.

How about if the video game was done in a similar fashion of Guild Wars.I like the way that game was designed. As players we are able to either group together and do the quests presented to us or hire henchmen and run solo with the hired help. In this manner no player was actually forced into playing it as an MMO.
On the Paizo end they can add a minimal subscription fee or perhaps tack it onto the current subscription packages that are currently offered. as an added bonus to their faithful subscribers. Perhaps this project could even be ran from Paizo itself. Its just something to think on..
