I'd probably switch the dwarf to ranger so you can go Sword and board without dealing with pre-reqs because that's pretty classicly dwarfish.
The human fighter I'd suggest High str the heaviest armor he can afford a two hander and power attack as probably the best starting build while an archer with a good mix of str and dex has the best long term damage potential.
However I don't know how combat oriented your son wants to be and there are certain options which tend to provide a player with more options than either of those builds so more info might be good.
Do you know stats or point buy value or anything else?

Dwarf: I like the Unbreakable archetype for this guy - I'm playing an NPC following this track w/a little power attack thrown in for flavor. This archetype plays up the legendary endurance of the dwarves and can ensure a frontliner long into the game. P/up drunken brawler feat for an extra HP and +1 to fort/will for an hour if you like the Endurance track.
For his array I'd think Con is primary, Str secondary, and Dex tertiary. Everything else is extraneous in this build.
Human: they're all about diverstiy; I say this is your 2wf. A 1h and light weapon, some power attack feats at 1st level and he will be chewing through plenty of minions in no time.
For the stats here obviously Str is primary but I'd make Dex secondary. Remember Daniel-san; best defense - no be there! The tertiary on this guy can be either Cha (intimidation, eventual weapon focus/dazzling display) or Con.
