According to D20PFSRD, these are the starting age for every classes.
Intuitive: Barbarian, Oracle, Rogue, Sorcerer.
Self-taught: Bard, Cavalier, Fighter, Gunslinger, Paladin, Ranger, Summoner, Witch.
Trained: Alchemist, Cleric, Druid, Inquisitor, Magic, Monk, Wizard.
What would be the starting age for the Samurai and Ninja? I would go self-taught if not trained for both, but has there been an "official" answer?
What about the occult classes: Kineticist, Medium, Mesmerist, Occultist,Psychic, Spiritualist? Was there anything on their starting age?
The Hybrid classes are easy, you take the most expensive of the two and voilà!
I've search, but couldn't find much to answer my question.

For occult classes, I do not think there is any strict ruling on that. Kineticist certainly seems Intuitive, while I would argue the others are self-taught.
Psychics are essentially a sorcerer variant, so I think it'd be weird not putting them in intuitive with Sorcerers and Oracles.
Self taught does make sense for the others, though I guess maybe I could see someone making the 'trained' argument for the Occultist, since they're pretty involved thematically. Mediums might be a bit of a coin flip too depending on how you look at them.

I considered that, but psychic magic feels to me more... difficult to intuit?
Like, managing whatever fancy hand gestures and arcane babble comes to mind when you think "Fireball"? Easy. Trying to keep your thoughts clear and focused, and your emotions untainted? Hard.

For the Samurai, ninja and antipaladin going with the root class make sense.
I was also leaning toward self-taught for the occult classes, with maybe Medium, Occultist ans Spiritualist as trained. I can see Kineticist being intuitive too.
Edit: The question arose when I did my Oyapok Medium for the competition Wayward Rogue had. I decided to make it "Trained" and give him a teacher.

That makes sense. I was sort of thinking the opposite though in my mind. Arcana, even for a sorcerer, requires complicated hand gestures and verbal incantations and sometimes even special materials if they take an archetype that loses eschew. Meanwhile a psychic just.. thinks it into being.
They do need to center their mind, which implies discipline and training, but I think that could go the other way just as much: A wizard, unless driven into a total panic can still focus perfectly clearly on their spells, while shouting BOO loudly at a psychic is enough to break their ability to wield any magic until they can calm down, which points to it maybe being a less refined discipline of magic too.

Here's my rankings and reasonings:
Kineticist: Intuitive
See iconic Kineticist.
Medium: Self-taught
The Medium requires learning how to hold a seance. The rest, being Charisma-based, is mostly his own connection with the spirits, but the seance is a complicated ritual.
Mesmerist: Intuitive
The Mesmerist has powers that stem simply from their force of personality. Unlike a Bard, they don't need to master a performance to draw them out.
Occultist: Trained
All the Occultist features are, in some way, based upon knowledge of occult rituals and how to unlock the power that is psychically charged into objects. It seems like a very cerebral class..
Psychic: Self-taught
While Psychics are based on innate talent, they require a Discipline, which in and out of itself implies some level of training..
Spiritualist: Intuitive
All of the Spiritualist's powers stem from their connection with the phantom, which doesn't seem to be sustained through any type of complicated ritual or discipline - it's the natural empathy of the Spiritualist which enables it to channel those powers..

It does give me food for thought, which I appreciate. And your line of reasoning does make sense..
So far, for the Occult classes, we would have:
Intuitive: Kineticist
Self-taught: Medium, Mesmerist, Psychic, Spiritualist.
Trained: Occultist
With these as alternate proposal made:
Intuitive: Mesmerist, Psychic
Self-taught: Occultist.
Trained: Medium
And for the current classes we would have this:
Intuitive: Barbarian,Ninja, Oracle, Rogue, Sorcerer,
Self-taught: Antipaladin, Bard, Cavalier, Fighter, Gunslinger, Paladin, Ranger, Samurai Summoner, Witch.
Trained: Alchemist, Cleric, Druid, Inquisitor, Magic, Monk, Wizard.
Hybrid Class taking the "worse" of the 2 parent classes
