I think Pistol whip should just work exactly like catch off guard but only for guns, at least one grit to work and use 1 grit for knock down.
I intend to playtest this, see how it runs.

Or work as is but as long as you have grit instead of spending a point. Make knock down cost the point.

I like that idea. It's bad enough gunslingers have to spend all that money on multiple guns (in case of misfire). At least with you idea, they won't have to also buy a melee weapon in addition.

oh wait, no...i said it right, you said it different.
the catch off guard lets you attack against flatfooted AC , the reason I think this applies is 1) the gunslinger needs a bit more here and there and 2) the gun wouldn't 'look' like a threatening melee weapon and people would be more apt to do things that provoke AoOs or close with him, because they don't think he can threaten or attack him, so they are surprised when the 'slinger baps them one. 3) The gunslingers major 'thing' is touch AC which puts him in harms way as a meleeist ranged guy...just fits with the theme of mixing it up at short range arms flailing, barrels blazing.
Also I think the 'modified' gun training that should give you +1/+1 to attack and damage with your chosen gun should apply to pistol whip (not the dex to damage just the numerical additions)
This gives him something when he runs out of ammo too.
You could even have the gun enchanted like a double weapon, ie a +2 gun with a +1 vicious butt plate or whatever.

this was my suggestion for Pistol-Whip in my new thread.
However, I think having its "as long as you have at least 1 grit" you can use the first part of Pistol-Whip, then spend 1 grit for the knock prone function is a good idea. I think it would be great to have that type of versitility in each deed, a maintained grit feature and a grit cost feature. That way they aren't totally hooped if they spend all grit but 1. In such a case, Wis modifier only might work.

How's this for the updated version, based on your suggestion, Pendagast?
The damage dealt by the pistol-whip is of the bludgeoning type, and is determined by the size of the firearm. One-handed firearms deal 1d6 points of damage (1d4 if wielded by size Small creatures) and two-handed firearms deal 1d10 points of damage (1d8 if wielded by size Small creatures).
Regardless of the gunslinger’s size, the critical multiplier of this attack is 20/x2. If the attack hits, the gunslinger can spend 1 grit point and make a CMB check to knock the target prone as a free action.
I also like the flat-footed AC thing, because no one, other than maybe a gunslinger, would expect an attack from the butt of a gun. I will have to consider things while I sleep. Nite!
