Johnny Cash's Old Iron Pot Family Chili
Ingredients
•5 pounds sirloin steak, chopped
•Shortening
•3 pkgs. chili seasoning mix
•3–4 15-oz. cans red kidney beans
•3–4 16-oz. cans whole tomatoes
•Cumin
•Thyme
•Sage leaves
•Garlic powder
•Onion powder
•Salt to taste
•Chopped onions
•Chili peppers
•2 tbsp. sugar
•Chili powder
•Chili con carne seasoning
•1 can tomato paste
Preparation
1.Brown the meat with a little shortening until medium. Add chili seasoning and cook 5 minutes.
2.Add beans, tomatoes, spices to taste, onions, chili peppers to taste, sugar, chili powder and/or chili con carne seasoning to taste. (If chili is too hot, add 1 to 2 cans tomatoes.) Add tomato paste.
3.If chili seems too thick, add water. Simmer on low for 20 minutes.

Did I ever tell you about the time I met Johnny Cash? It was back in 1995 and I was living in Montgomery, Alabama. I used to go and put flowers on the grave of Hank Williams Sr. once a week, because I promised my Grandma that I would just before she passed away. One day I was there and this big black pickup pulled up and out stepped Hank Williams Jr. and Johnny Cash. They were doing a benefit show together that night and had stopped in to pay their respects. I tried to slip off before they saw me, but it didn't work and they stopped to talk to me. Then they invited me to lunch! So where does Hank Williams Jr. and Johnny Cash take a person to lunch? Pizza Hut! It was awesome.
