There are the player guides for each of the Adventure Paths which'll be released at the start of each new AP. So when will we get another new RACE Specific PF Companion, Paizo?
I'd just like to know which race we'll see next in PF Companion and when. I realize that it'll probably be Dwarves of Golarion. Dwarves are too much of a fantasy Basic not to be next. Though I personally want to see Gnomes of Golarion more.

There aren't any race specific companions on the schedule yet, which means none before next Gen Con at least. If and when we do another one, it's not a guarantee that we'll do dwarves next, though.
It's looking like the elves book was popular enough that other race books should be a good idea, in any case. But we're kinda holding off on that until the PF RPG is solid and done too...
SO. Not until late next year, at the earliest.

My NASCAR knowledge is about as zeroed out as it can get. That's the sport about racing cars, yeah?
As for waiting a year for a dwarf book... it will indeed be a long time. We've got everything scheduled out through to next August right now, and even if we decide to do a race book in September, "Dwarves" is by no means guaranteed to be the topic. If the choice were up to me, in fact, I'd do race books in this order:
Elves
Halflings
Gnomes
Half-orcs
Dwarves
And I'd be VERY tempted to branch out into non-core races like tieflings or lizardfolk or goblins before too long.
Fortunately for dwarf fans out there... I'm not the only one who makes these decisions. Which is another way of saying, who knows what the next race book will be? We don't need to set our next batch of releases in stone for about 3 months.

Well, the first mistake I have seen Paizo make so far is releasing Elves before dwarves. That just makes no sense what-so-ever. I can only figure some elf wannabe bribed the powers that be with pizza.
And I would seriously, and really seriously, release Dwarf, Gnome, Halfling, Half-Orc and Half-Elf, in that order.
Why Half-Elf? Because this "race" has more potential than any other. In Lord of the Rings, the great kings of old, were in essence Half-Elves. Aragon was, in D&D terms, a Half-Elf. It makes no sense to me that these people would not seek one another out and make small communities that would produce a long-lived race of human elves. These people would then be able to create their own culture combining the best, and worst, of both parent races.
The Illuminati of Gollarion could easily be Half-Elves...
Halflings are another race open to a new Paizo vision. Gnomes have received an overhaul, but halflings are just short humans right? Surely the folks at Paizo can do better than that. Surely Gollarion is more than a few very interesting collection of human cultures. If that were the case, then the Gollarion CS should just eliminate elves, dwarves, gnomes, halflings et al, all together. Just make it a humans vs everything else world. Humans = good, everything else = evil.

If you do Tieflings, you really need to include Aasimars in the same book. I know everyone likes playing the diabolically touched PC who wants to make good on their heritage. You know, characters just like Drizz't just with a different origin.
But Tieflings and Aasimars are two sides of the same coin. The dark is made more shadowy by the light. Besides what is more interesting to play? A Tiefling trying to overcome prejudice and make good... or an Aasimar who has fallen from grace and is seeking redemption even in the face of preferential treatment or even maybe prejudice not against them, but of preconcieved notions of what they can do, but can't really do.
I just thought of an Aasimar, raised as the fulfillment of a prophecy who cannot stand the pressure. He rebels and kills the very people he was meant to protect. But he didn't mean for them to die, he just wanted freedom from the demands he could never fulfill. So now he seeks to overcome his deeds, to return to grace and bring healing to the people, and in so doing just might fulfill that prophecy after all.

To me, it doesn't matter which. I don't have a preference that would put one above the other. I just want to see more on all the races in their own book! Specialized knowledge like that helps me 'create the world' I play in. And the more the better.

Would it be possible to combine dwarves with gibbering mouthers, gelatinous cubes and other detritus? And then write "Don't buy this book" under the title and bury the entire stock under high-level radioactive waste?
A gnome sourcebook, though, would rule, being as Golarion gnomes actually appear to be interesting. Find a way to give them some darkness, though; an plot by evil gnomes to do Something Awful would be cool.

It's funny. The number of dwarves I've seen that were not walking cliches could be counted on one hand - by a clumsy lumberjack.
In fact, I can only remember two - and one of those was played by myself. I don't know what it is. I do get cliche elves, cliche halflings, cliche gnomes, cliche drow. But I also seen plenty that weren't walking stereotypes. Only dwarves seem to be the big exception.
