Stars-n-Stripes Breakfast Parfait
Ingredients:
• Crisco® Original No-Stick Cooking Spray
• 1 cup Hungry Jack® Buttermilk Complete Pancake & Waffle Mix (Just Add Water)
• 3/4 cup water
• 1 cup fresh blueberries
• 1 cup fresh strawberries, hulled and chopped
• 2 teaspoons Hungry Jack® Microwave Ready Regular Syrup
• 1 1/4 cups frozen whipped topping, thawed
• Dash ground cinnamon
• Flag and fireworks party picks
• 2 1/4-inch star aluminum cookie cutter (optional)
• 2-inch pieces red string licorce (optional)
Preparation Directions:
1. HEAT skillet over medium-high heat or electric griddle to 375°F. Spray with no-stick cooking spray.
2. COMBINE pancake mix and water in medium bowl, stirring just until large lumps disappear. Spoon 1 teaspoon batter onto hot griddle, cooking 1 minute on each side or until golden brown. Make 24 mini-pancakes. Spray inside of star cookie cutter with no-stick cooking spray. Place on hot skillet. Fill with 1 tablespoon batter, cooking for 2 1/2 minutes. Carefully remove cookie cutter (it will be hot). Turn star pancake. Cook until golden brown. Make 4 stars.
3. MIX blueberries with 1 teaspoon maple flavored syrup in a small bowl. Repeat with strawberries in a separate bowl. Whisk cinnamon into whipped topping. Place into corner of a resealable bag. Cut off small corner from bag. Place 3 mini-pancakes in base of each parfait glass; layer with 1/4 cup of a fruit and whipped cream. Repeat. Top with star pancake. Decorate each parfait as desired. Serve immediately.
4. FIRECRACKER PARFAIT: Top off parfait with whipped topping and place a 2-inch piece of red string licorice in center.

Kinda low-tech but looks like it beat those eggs silly.
{finishes unloading first daily 18-wheeler of beer} I thought the peasant blood was supposed to be on there. It's like a seasoned cast iron skillet.

Praline Ice Cream Crepes
Ingredients:
CREPES
• 1 cup Hungry Jack® Complete Buttermilk Pancake & Waffle Mix (Just Add Water)
• 2 tablespoons sugar
• 1 cup water
• 2 large eggs
• Crisco® Original No-Stick Cooking Spray
•
SAUCE
• 1 cup firmly packed brown sugar
• 1/4 cup butter
• 1/4 cup heavy cream
• 1/8 teaspoon vanilla extract
• 1/4 cup chopped pecans
•
FILLING
• 1 pint vanilla ice cream (2 cups)
Preparation Directions:
1. COMBINE crepe ingredients in small bowl. Beat until batter is smooth.
2. SPRAY an 8-inch skillet with no-stick cooking spray. Heat over medium-high heat. Pour 2 tablespoons batter into hot skillet, immediately tilting pan until batter covers bottom. Cook until edges start to dry and center is set. Turn to brown other side. Transfer to plate.
3. COMBINE brown sugar, butter and cream in small saucepan. Blend well. Bring to a boil. Reduce heat to low. Simmer 2 minutes, stirring occasionally. Remove from heat. Stir in vanilla and pecans.
4. SPOON 1/4 cup ice cream onto center of each crepe. Fold edges of each crepe over. Place seam side down on dessert plate. Spoon about 2 tablespoons sauce over each filled crepe.
Yield: 8 servings

Smoked Sausage Au Gratin Skillet Dinner
Ingredients:
• 1 pound cooked smoked sausage or kielbasa, cut into 1/2-inch pieces
• 1/2 cup chopped onion
• 1 (4.9 oz.) package Hungry Jack® Cheesy Scalloped Potatoes
• 1/8 teaspoon ground red pepper (cayenne)
• 2 1/3 cups water
• 2/3 cup milk
• 1 tablespoon butter
• 2 cups assorted frozen vegetables, such as California blend
Preparation Directions:
1. COOK sausage and onion in large skillet until sausage is browned and onion is tender, stirring frequently. Drain.
2. ADD potato slices, sauce packet, pepper, water, milk and butter. Mix well. Bring to a boil. Reduce heat. Simmer 15 minutes, stirring occasionally.
3. STIR in vegetables. Simmer 5 to 8 minutes or until potatoes and vegetables are tender, stirring occasionally.
Yield: 6 Servings

Apple Cinnamon Streusel Coffee Loaf
Ingredients:
• Crisco® Original No-Stick Cooking Spray
• 1 (7 oz.) package Hungry Jack® Easy Pack™ Apple Cinnamon Wheat Pancake Mix, divided
• 1/4 cup firmly packed brown sugar
• 1/2 teaspoon ground cinnamon
• 1/2 cup sour cream
• 2 tablespoons Crisco® Pure Canola Oil
• 1 large egg
• 1/4 cup toffee baking bits
TOPPING
• 1/4 cup reserved pancake mix
• 2 tablespoons firmly packed brown sugar
• 1/2 teaspoon ground cinnamon
• 1 tablespoon butter, melted
• 1 tablespoon toffee baking bits
• 1/4 cup Pillsbury Creamy Supreme® Vanilla Flavored Frosting
Preparation Directions:
1. HEAT oven to 375°F. Line 9 x 5-inch loaf pan with foil. Coat with no-stick cooking spray. Reserve 1/4 cup pancake mix for topping.
2. COMBINE remaining pancake mix, brown sugar and cinnamon in large bowl. Beat sour cream, oil and egg with a fork. Stir into dry mixture until evenly moistened. Stir in toffee bits. Spread half the batter in bottom of prepared pan.
3. For Topping: STIR reserved 1/4 cup pancake mix, brown sugar, cinnamon and melted butter in small bowl with a fork until crumbs form. Sprinkle batter with 3 tablespoons topping. Spread remaining half of batter on top. Sprinkle with remaining topping and toffee bits.
4. BAKE 30 to 35 minutes or until toothpick inserted in center comes out clean. Cool in pan 15 minutes. Lift loaf with edges of foil to remove from pan. Place frosting into corner of resealable plastic bag. Microwave on HIGH 5 seconds or just until slightly warm. Cut small corner off bag. Drizzle over top of loaf.
Yield: 8 to 10 servings
